We tried the brand-new Crisp & Crumble Cookie at Gideon’s Bakehouse in Disney Springs. Here is how the apple, crumble and vanilla glaze held up, and whether it is worth the line.

The monsters have gone back into the walls, and the gothic bakery in The Landing at Disney Springs smells like an apple orchard that took a wrong turn into a haunted mansion. The Crisp & Crumble Cookie is the brand-new November 2026 limited cookie at Gideon’s Bakehouse in Disney Springs, and since it is a never-before-seen flavor rather than a returning favorite, we had to find out whether it lives up to the hype or is just a very expensive apple crisp in disguise.

We already broke down the full November 2026 Gideon’s Bakehouse menu, including the Dutch Apple Pie Cake and the Mocha Cinnamon Cold Brew. This post is all about the cookie. On this day, we stood in line for about seven minutes, unwrapped it, and took it apart crumb by crumb, so you know exactly what you are getting.

What Is the Crisp & Crumble Cookie?

Crisp & Crumble Cookie Gideon's Bakehouse November 2026

Gideon’s Bakehouse describes the new flavor as its “autumnal enchantress of an almost half-pound Gideon’s Cookie.” In plain English, the bakery says the cookie is built around apples, toasted sugar, and a light hand with fall spices, then topped with a brown butter oat crumble and finished with a vanilla glaze. Like every Gideon’s cookie, it is made from scratch, and the bakery also bills it as all the flavors of fall in a single cookie.

That weight claim is not marketing fluff. Gideon’s has been selling cookies in that weight class since the Disney Springs shop opened, and Disney’s own listing notes that the cookies take more than 24 hours to make. So yes, this is one cookie. No, you should not plan on finishing it before dinner. Still, we would have gladly eaten the whole thing!

How Much Is the Crisp & Crumble Cookie?

We paid $7.00 for our Crisp & Crumble Cookie. Like every monthly limited cookie, there is a cap of two per person while supplies last, which is the bakery’s polite way of saying please do not buy the whole tray.

Our Gideon’s Bakehouse Crisp & Crumble Cookie Review

First Look

Out of the paper wrapper, the Crisp & Crumble looks less like a cookie and more like a small apple crisp that has been trained to stand upright. The oat crumble covers most of the cookie, and the vanilla glaze is drizzled over the top like a frosting. The edges have that golden, slightly craggy Gideon’s look, while the middle sits tall and thick.

The Cookie Base

Break it open, and you get the dense, slightly underbaked center Gideon’s Bakehouse fans line up for. The toasted sugar is the quiet hero here. It gives the dough a caramel-adjacent depth, so the cookie tastes more like the edge of a pie crust than plain brown sugar. The apple shows up in soft pieces throughout the dough, and they bring a gentle tartness that keeps everything from tasting like a candle store.

The Crumble and Glaze

The brown butter oat crumble is where this cookie earns its name. It is crunchy, nutty, and buttery, and it adds the texture contrast that a big, soft cookie needs. It is also messy. You will find crumble on your shirt, your phone, and possibly the person next to you in line. The vanilla glaze softens the spice and pulls the whole thing toward apple pie à la mode territory. Guests should be aware that the exterior of this cookie will be a bit harder than most Gideon’s Bakehouse cookies.

Sweetness and Spice

The fall spices are restrained. This is a light dusting of warm spice, not a pumpkin spice ambush, which we appreciated. Between the toasted sugar, glaze, and crumble, it is still a rich cookie, so split it with someone or plan to eat half now and half later. However, those looking for the powerful flavors of other Gideon’s Bakehouse cookies will be disappointed. This is a more understated cookie…well, for Gideon’s Bakehouse that is!

How It Compares to Other Gideon’s Fall Favorites

If you love the Coffee Cake Cookie, the Crisp & Crumble will feel familiar, since both lean on a buttery crumble topping. The difference is fruit. The apple and glaze make this one brighter and more dessert-like, while the Coffee Cake Cookie stays in breakfast-pastry territory.

It also slots neatly beside the Pumpkin Bread Chocolate Crumb Cookie, which debuted in November 2022 and later moved to September (September 2026 menu). Also, if apple is your thing this month, the Dutch Apple Pie Cake is back on Wednesdays and Saturdays through Thanksgiving, with apple spice layers, apple caramel buttercream, pie filling, and an oat crumb topping. Having the cookie and the cake side by side is basically a Gideon’s apple flight.

Is the Crisp & Crumble Cookie Worth It?

Yes, especially if you are tired of pumpkin everything and not looking forward to peppermint taking over for the holiday. The Crisp & Crumble Cookie is the most autumn-forward cookie Gideon’s has offered in a while, and the crumble topping gives it a texture you do not get from the standard lineup. It is rich, a little messy, and absolutely a sharing cookie. If you only buy one limited item this month, make it this one, then come back on a Wednesday or Saturday for the cake, ha-ha!

Will this become our favorite Gideon’s Bakehouse cookie? We don’t think so. However, it makes a wonderful new fall flavor for cookie fans!

If the line is long, remember that our team has stood in queues for food before. Recently, we waited 20 to 25 minutes for breakfast spring rolls at Magic Kingdom, so a cookie line in The Landing area at Disney Springs is practically a spa day.

Make It a Disney Springs Fall Dessert Crawl

If one almost half-pound cookie is not enough (no judgment), the West Side area of Disney Springs has a Thanksgiving dessert waiting. The Salt & Straw November flavors include a Pumpkin Pie with Almond Croissant Streusel and a vegan Cranberry Shortbread Tart, plus the returning Parker House Rolls with Salted Buttercream. Pair a scoop with half a Crisp & Crumble for a full harvest dessert course without stepping inside a park.

Wondering if a single treat justifies a dedicated trip? Our team tackled that very question in Is It Worth the Detour: Across Disney World for One Bite. Since Disney Springs needs no park ticket and the parking garages are free, a cookie run is one of the cheaper detours you can make on property. Hungry for something savory first? Gideon’s sister concept Six Ravens is now open at Disney Springs too.

Crisp & Crumble Cookie Final Thoughts

After a month of Frankenstein (see our October 2026 Gideon’s Bakehouse guide), the Crisp & Crumble is a cozy, buttery reset. It tastes like the first cool morning in Florida, which, to be fair, is usually still 78 degrees.
