Thanksgiving Series Salt and Straw 2026

Salt & Straw November flavors start November 2 at Disney Springs. See what is new, what is leaving, the Almond Brittle Cake, and tips before you visit.

Enjoy those last bites of Halloween candy, because the Salt & Straw November flavors start scooping Monday, November 2. That means the scoop shop on the Disney Springs West Side is about to trade trick-or-treat for pass-the-stuffing.

Salt & Straw officially revealed the new lineup, and the menu swap happens on the very first day of the month. If you were hoping to squeeze in one more scoop of the Salt & Straw Halloween 2026 lineup, you must wait for next year.

What Are the New Salt & Straw November Flavors?

Salt & Straw rotates its limited-time menu every month, and November has belonged to its five-course Thanksgiving Series for years. In 2025, the series ran from November 1 through Thanksgiving Day. We expect these flavors to last until Thanksgiving. This series offers a five-course meal from appetizer to dessert.

Here is the November 2026 lineup:

  • Parker House Rolls with Salted Buttercream (returning): Toasted, buttered rolls with flaky sea salt, folded into a sweet-and-salty butter ice cream.
  • Maple Kojinut (can also be spelled Koginut) Squash with Pomegranate (returning): Maple sage ice cream with roasted Kojinut squash from Dan Barber’s Row 7, rippled with pomegranate jelly and topped with a buttery cracker-hazelnut crumble.
  • Turkey and Bacon Caramel (new): Thanksgiving’s savory-sweet turkey flavor, this year built with bacon and caramel drizzle.
  • Cranberry Shortbread Tart (new, vegan): Tart cranberry paired with buttery shortbread in a coconut base.
  • Pumpkin Pie with Almond Croissant Streusel (new): Pumpkin pie ice cream finished with a double-baked almond croissant streusel.

A Quick Look Back at Last Year’s Thanksgiving Series

For context, here is what the 2025 version looked like, so you know what kind of beautiful chaos to expect:

  • Parker House Rolls with Salted Buttercream: buttered, sea salted dinner rolls folded into a sweet and salty butter ice cream
  • Turkey Stuffing and Cranberry Sauce: herbed brioche bread pudding with turkey sausage in a salt and pepper ice cream, streaked with cranberry jam
  • Maple Koginut Squash with Pomegranate: maple sage ice cream with roasted squash from chef Dan Barber’s Row 7, pomegranate jelly and a cracker hazelnut crumble
  • Pumpkin Pie Tiramisu: pumpkin pie coffee ice cream with tiramisu cake swirls
  • Cranberry Orange Sorbet (v): the dairy free pick, made with orange zest and Oregon cranberries

Yes, there was turkey in the ice cream. Yes, people lined up for it anyway. The Disney Springs shop has carried the Thanksgiving menu before, including in 2024 when it debuted at both Disney Springs and Downtown Disney, so this is not a West Coast only situation.

What’s Leaving: The Halloween Series

Salt & Straw Halloween 2026: Chocolate Graveyard Cookie Crumble (Vegan)

With the new Salt & Straw November flavors menu arriving November 1, October’s Halloween lineup at Disney Springs is on its way out. That list included The Great Candycopia, Jack O’Lantern Pumpkin Bread, Creepy Crawly Critters (made with real chocolate covered crickets and mealworms), Witch’s Brew Fruit Punch Sherbet, and the vegan Chocolate Graveyard Cookie Crumble. If you were still working up the courage to eat the bugs, Halloween weekend is your last real shot. Our full rundown of the Salt & Straw Halloween 2026 flavors has the details on each one.

Salt & Straw November Flavors Also Coming to Disney Springs: Almond Brittle Cake

Disney’s 2026 holiday foodie guide confirms the returning Almond Brittle Cake at Salt & Straw from November 6 through December 31. It is a double fold vanilla ice cream cake with Grandma Malek’s almond brittle and salted chocolate ganache, topped with saltine Florentine cookie clusters and a chocolate drizzle, and it serves 8 to 20 people. If you are in charge of dessert for a Friendsgiving, this is the easiest win on property.

Holiday eats are popping up across Walt Disney World. If you are heading to Disney’s Hollywood Studios, our Disney Jollywood Nights 2026 foodie guide covers the treats at the separately ticketed event, which starts November 7.

The Year-Round Menu Still Has Your Back

Not everyone wants cranberry sauce in their cone, and that is fine. The Disney Springs shop keeps its classic flavors on the board, including Sea Salt with Caramel Ribbons, Honey Lavender, Chocolate Gooey Brownie, and Salted, Malted Chocolate Chip Cookie Dough. The location also carries a pair of Florida flavors you will not find at most Salt & Straw shops: The Salty Donut Guava & Cheese and Panther Coffee Chocolate Tres Leches.

Want something you can hold like a taco? The Tacolate, a cinnamon ancho ice cream block dipped in dark chocolate inside a waffle taco shell, is listed at $9.00.

Salt & Straw’s November menu is one of the few times a year when ordering ice cream feels like a dare. Whether the 2026 lineup brings back the turkey or goes in a new direction, the Disney Springs shop remains one of the best dessert stops on property that does not require a park ticket

Looking back, the Salt & Straw June 2026 flavors leaned fine dining and the Salt & Straw Apple Series leaned fall nostalgia. Also, if you need something savory before dessert, Blaze Pizza just rolled out its Fan Favorites menu.
