The October 2026 Gideon’s Bakehouse menu brings back the Frankenstein and Bride of Frankenstein cookies and cake slices at Disney Springs. 

The October 2026 Gideon’s Bakehouse menu is official, and the monsters are back. Frankenstein and Bride of Frankenstein cookies and cake slices return to Disney Springs at Walt Disney World, just as fans expected. It is the same lineup that headlined October 2025. Both cookies are the nearly half-pound monsters Gideon’s is famous for, and both cake slices return with their signature drips.

An October Tradition at Gideon’s Bakehouse

October is the big month at Gideon’s. It is Halloween season, and it is also birthday month, since the original shop opened at East End Market in October 2016. Every October, the Disney Springs location turns into Gideon’s “Spookhouse,” complete with rotating collectible menus and weekend surprise desserts.

The headliners have not changed in years. The Frankenstein Cookie and Bride of Frankenstein Cookie came back in October 2023, 2024, and 2025, each time with matching cake slices.

Fans Expected the October 2026 Gideon’s Bakehouse Cookies Back

If you have spent any time in a Disney Springs line lately, you already knew this was coming. Betting against the Frankenstein Cookie in October is like betting against pumpkin spice at Starbucks in September. Fans have treated it as a lock for years, and the bakery has never given them a reason to doubt it.

The real questions were about everything around the cookies: the cakes, the cold brew, and the merch. Gideon’s did hand fans a different kind of tease in September. The September menu brought back Dr. Tobias Brimstone and his pumpkin flavors. The bakery also hinted that a major project, in development through much of 2026, would be revealed as part of a tenth-anniversary celebration for the original East End Market shop in October. Fans have been guessing about that mystery ever since.

One more note for the planners. Last year the Halloween Foodie Guide tipped us off early. This year’s Disney Springs Halloween Foodie Guide covers dozens of locations but does not list Gideon’s, so the bakery’s own announcement was the one to wait for.

October 2026 Gideon’s Bakehouse Cookies and Cakes

Here is the October 2026 Gideon’s Bakehouse menu. Everything below matches the October 2025 lineup.

• Bride of Frankenstein Cake Slice: Two layers of vanilla cake sandwiching a single layer of chocolate cake, covered in vanilla sandwich cookie buttercream and finished with a reverse ganache drip.
• Bride of Frankenstein Cookie: A nearly half pound cookie packed with white chocolate, vanilla sandwich cookie pieces, and M&M’s Milk Chocolate Candies.
• Frankenstein Cake Slice: Three layers of chocolate cake with chocolate sandwich cookie buttercream, topped with M&M’s and finished with a chocolate ganache drip.
• Frankenstein Cookie: A chocolate cookie base loaded with Double Stuf sandwich cookies and colorful M&M’s Milk Chocolate Candies.

The white chocolate in the Bride of Frankenstein Cookie is the pick for guests who find Gideon’s chocolate cookies a little intense. Otherwise, the two cookies come from the same mold, and plenty of fans call the October cookies their favorites of the year. Last October, a cookie cost $7, a cake slice $11, and a cold brew $6.50.

In recent Octobers, the two monster cakes have followed a fixed pattern: Frankenstein Cake Slices on Wednesdays and Saturdays, and Bride of Frankenstein Cake Slices on Sundays and Thursdays. The rest of the week featured regular rotating flavors. For this year, we expected the same.

Gideon’s Bakehouse is celebrating 10 years with a unique dessert every weekend! The kitchen rule: it has to be something they have never done before! This year marks 40 unique desserts!

Rare East End Drop

The Gideon’s Bakehouse location in the East End Market is participating in a market-wide First Friday event with a special dessert! Weirdly expensive to make, so Gideon’s Bakehouse swore they would never do it again. Still, Cookie Butter Pudding is back for a very limited time! This scratch-made delight offers a lower level of Cookie Butter Sauce covered in a healthy serving of Cookie Butter Pudding and topped with a nice crumbling of the mega yummy Biscoff Cookies Of course, a Butterscotch sticker brands the top of our little package because details matter.

Only at the East End Market location. Guests can also enjoy special items from all the vendors at East End! Friday October 2nd from 4pm to 8pm. While Supplies Last. Limit 2 per person. 

October 2026 Gideon’s Bakehouse Cold Brews

Cold brews are a Disney Springs exclusive, so guests who only stop at East End Market will not find the monthly cold brew there. The October pick has changed over the years. French Toast Cold Brew was the October and November choice in 2023 and 2024, and Dark Mocha Cold Brew took over in 2025. Dark Mocha then returned in April 2026, so fans were already debating whether French Toast gets a comeback.

The Cookie & Cream Nitro Cold Brew is back for October 2026 at Gideon’s Bakehouse. Cookies & Cream Nitro Cold Brew is made with pieces of real cookies and real cream! This is vegan but not gluten-free.

October 2026 Gideon’s Bakehouse Availability and Purchase Limits

As always, expect limits. Gideon’s limits monthly cookies to two per person and cake slices to two per person per flavor, while supplies last. The Disney Springs shop does not take cookie preorders. Whole cake preorders go through the East End Market shop. Limited items can sell out, so earlier in the day is the safer play for the Frankenstein and Bride cookies.

October is Gideon Bakehouse’s biggest merchandise month. Last October, Gideon’s ran four merch drops with rotating collectible menus on the 1st, 9th, 16th, and 23rd. The Three Little Ones returned, and Black Cat Charity Month sent proceeds from cat merch to Liberation Cat House.

Inside the Gideon’s Bakehouse Operation

How Gideon’s Got Started

Founder Steve Lewis sold cookies from his home kitchen for years before holding his first pop-up at East End Market on July 19, 2016. The first physical shop followed that October with one employee and an $800 budget. The name comes from an 1898 cookbook Lewis bought, which had faded notes in the margins from a boy named Gideon who dreamed of becoming a baker. Gideon’s marked the tenth anniversary of that pop-up at East End in July with an exclusive cake slice and merch, and the October celebration centers on the original shop’s opening.

The Disney Springs Shop

Gideon’s announced a Disney Springs flagship in June 2020, opened at the end of that year, and held its grand opening in January 2021. The shop sits in The Landing. Its gothic Victorian look draws on Edward Gorey and Disney’s Haunted Mansion, and it earned a Thea Award for Best Retail Design.

How the Menu Works

Everything is made from scratch, and the cookies weigh nearly half a pound and take more than a day to prepare. The menu has a few moving parts:

• Monthly limited cookie: One new or returning cookie each month, available at both shops.
• Cake slices: A rotating lineup of tall three layer slices on a daily schedule that changes monthly, with a limit of two per person per flavor.
• Nitro cold brews: Vegan, made with oat milk and coffee from Lineage Roasters, with a limited-edition flavor at Disney Springs most months.
• Collectible menus and merch: Each month’s desserts are paired with a character from Gideon’s lore, plus a merch drop and a collectible menu.
• Disney Springs exclusives: The Coffee Cake Cookie is sold daily at Disney Springs, along with an evening Dark Coffee Cake Cookie.

Lines, Preorders, and East End Market

Lines are part of the experience. When the queue gets long, Gideon’s has used a virtual queue that texts guests when it is their turn, though it rarely needs one anymore. The original East End Market shop in Orlando’s Audubon Park neighborhood handles cookie preorders and whole cakes.

Six Ravens

The newest chapter is Six Ravens, a savory sister concept that soft-opened on August 3 in the former Art of Shaving space, just around the corner from the bakery. It serves Coffyns, which are hand pies baked in a house-made yeast roll, along with smashed potatoes and dips. Disney Springs guests now have two Gideon’s lines to consider.

What’s Next?

With the Frankenstein and Bride of Frankenstein lineup back, the next questions are the tenth anniversary reveal and what November brings. Will the bakery repeat that, or does the anniversary change the plan? Gideon’s has not said. Longtime fans know to expect the unexpected.
