One of those half-pound cookies can only be acquired in the mornings. It stands out for its nostalgic flair and crowd-pleasing charm: the Gideon’s Bakehouse Coffee Cake Cookie.
What Makes the Coffee Cake Cookie Irresistible?

At first glance, it’s clear why this treat resonates: a hulking vanilla-bean cookie topped with a thick layer of crumble that mimics the buttery, cinnamon-y goodness of your favorite coffee cake. The base is a rich and extra buttery vanilla bean cookie. This provides bites for those enjoying it that are soft, chewy, and comforting.

On busy days, this could happen around 11:00 a.m., one hour after Gideon’s Bakehouse opens each day. However, we went on a standard summer weekday and bought two Gideon’s Coffee Cake Cookies at around 1:00 p.m. In fairness, the Gideon’s Coffee Cake Cookie are usually sold out by the afternoon.
Regarding its flavor, this soft cookie provides crisp streusel meets crunchy crumbs for a sensory and textural delight. At nearly half a pound, these cookies feel monumental, evoking gravity-defying bakery art.

As you might imagine, this cookie pairs well with one of the coffee cold brews served at Gideon’s Bakehouse. The bakery’s intention to create a breakfast coffee cake-style cookie presents itself as obvious. The exterior portion of this cookie looks like a coffee cake. The texture provides crunch on the outside and a soft interior. When I cut this cookie open, the intent of the “morning” flavor became even more apparent.
Some guests desire a bit more cinnamon flavor with this cookie. However, that might overwhelm the vanilla bean cookie base. Guests looking for a breakfast-type cookie without all the heavy chocolate flavor of most of the Gideon’s cookies, this cookie will fulfill that desire. However, if you are looking for a solid traditional-style cookie, this cookie might not be your best choice.
