August 2023: Peanut Butter Cold Brew Cookie

Rather than bringing back Key Lime as the monthly feature, Gideon’s introduced the Peanut Butter Cold Brew Cookie in August 2023. This unique cookie combined peanut butter cookie dough with freshly ground espresso before being topped with chopped Reese’s Peanut Butter Cups and Reese’s Pieces. The sweet-and-salty combination paired perfectly with Gideon’s signature cold brews and quickly developed its own loyal following. Interestingly, guests could still purchase the Key Lime Chocolate Chip Cookie during August 2023 as part of Disney Springs’ Flavors of Florida celebration, giving visitors two August-exclusive cookies to enjoy.

What We Expected for Gideon’s Bakehouse August Cookies 2026

Before the official announcement, there were several possibilities based on Gideon’s recent history. The most likely outcome seemed to be another return of the Key Lime Chocolate Chip Cookie. After appearing in both 2022 and 2024, it had established itself as one of the bakery’s signature late-summer offerings. However, guests could have bought that cookie at Gideon’s Bakehouse on July 31.

Another possibility was the return of the Peanut Butter Cold Brew Cookie, especially given the continued popularity of coffee-inspired desserts and Gideon’s expanding lineup of seasonal cold brews. Of course, Gideon’s has increasingly surprised guests with brand-new monthly creations over the past year, making an entirely original cookie or cake another realistic possibility. As always, the bakery’s monthly cake slices and specialty cold brews were also expected to complement whichever cookie ultimately took center stage.

Gideon’s Bakehouse has now officially revealed its August 2026 lineup for Disney Springs. So, we got the return of the Peanut Butter Cold Brew Cookie. Gideon’s Bakehouse describes it this way:

We’re spoiling you with one of the most overindulgent releases ever to appear at Gideon’s Bakehouse! We started by paying tribute to our popular Peanut Butter Nitro Cold Brew in Cookie form, but it got out of hand. The Peanut Butter Cold Brew Cookie is a PB Cookie laced with Freshly Ground Locally Roasted Decaf Espresso and fully covered in chopped Reese’s Peanut Butter Cups and Reese’s Pieces! It should be overly sweet, but that Espresso Bean works to balance it all out for a unique and flavorful experience!

Weekend Special Gideon’s Bakehouse August Cookies

These special cookies will be available August 8th & 9th & 15th & 16th! t’s a rich Chocolate Dough made with Black Cocoa Ganache stuffed with a chunk of Cookies & Cream White Chocolate Faux Fudge and covered in crunchy Sanding Sugar.

Also, Praline Pecan Sugar Cookies will be available on August 22 and 23. They feature Vanilla Bean Dough stuffed with a Cinnamon Cream Cheese filling studded with Praline Pecans and covered in Turbinado Sugar.

Limited-Time Cake – Peanut Butter Cold Brew Cake (PB Cold Brew Cake)

Gideon’s Bakehouse describes the PB Cold Brew Cake like this:

One of our best Cookies in Cake Form! YESSS!! It’s a Double Frosted Cake that covers three layers of our super soft Chocolate Cake with a full layer of our addicting Peanut Butter Buttercream and our Mocha Espresso Buttercream! Throw in some Reeses Pieces and PB Cups and WOW! This Cake is a beast! For clean slices, keep it refrigerated ahead of serving. Leave it at room temp for one or two hours (depending on your room temp) and cut slices with a warm knife just as the buttercream starts to soften!
