Some people go to SeaWorld Orlando for the dolphins. Others, the coasters. But us? However, we’re here for the food—and possibly the regret that follows. This year, the Bands, Brew & BBQ festival returns to SeaWorld Orlando with the usual suspects: brisket, beer, and bold music. Still, located among the meat mountains and smoke clouds is a veggie trying really hard to fit in: the Corn Rib SeaWorld Orlando chefs designed for the Memphis Baby booth.
New for 2025 and priced at $10.99 (or wisely deducted from your sampler lanyard), this culinary oddball is described as: “Seasoned Fried Corn Rib, Butter, Balsamic Reduction, Red Pepper Mashed Potatoes.”
Sounds fancy, right? Let’s start by tackling the corn rib itself, because yes—it’s a real thing, and no—it’s not a prank pulled by a vegan uncle at a BBQ.
So… What Is a Corn Rib, and Why Is It on TikTok?
A corn rib is what happens when chefs get bored, over-caffeinated, and too attached to spiralizers. Basically, it’s an ear of corn sliced lengthwise into quarters (no easy feat, by the way—corn is built like a medieval weapon). These thin wedges are then seasoned and either roasted, grilled, or fried until they curl into rib-like shapes. The result? A veggie that pretends it’s also meat. It’s corn cosplay.
Corn ribs exploded on social media around 2021, thanks to TikTok influencers who declared them “just like ribs!” However, food influencers on TikTok led people astray. Spoiler: they are not just like ribs. However, they can be fun to eat, curly like cartoon mustaches, and sometimes taste like summer if seasoned right. A Rib with an Identity Crisis (and a Side of Redemption)

First impression? It looks okay, right? The corn rib arrived nestled in a bed of red pepper mashed potatoes, drizzled with balsamic reduction, and a gentle gleam of butter like it had been moisturized before serving. We respect the effort.
The texture was near perfect: juicy, slightly crispy edges, and fried just right. But then we hit the seasoning wall. Or more accurately, the lack of seasoning wall. The menu promised “seasoned” corn rib, but our taste buds were left checking Google Maps for flavor directions. It was kind of like being promised a firework show and getting a birthday candle.
That said, it wasn’t a total letdown. The corn itself was fresh and juicy, and it’s undeniably a fun item to eat. You feel like a cartoon cowboy gnawing on it. It becomes messy finger food very quickly. Still, at a BBQ festival, you expect smoke, spice, and a little sass. This corn rib came in more like a polite Midwestern guest: well-behaved, moisturized, but ultimately bland.
Corn Rib SeaWorld Orlando: The Real Star? The Mashed Potatoes Deserve a Trophy.

Listen, we didn’t expect to go to a BBQ festival and fall head-over-boots in love with mashed potatoes. However, here we are. These red pepper mashed potatoes are creamy, flavorful, and smoother than your aunt’s karaoke version of “Sweet Caroline.” The red pepper adds a subtle smoky kick, and paired with the balsamic drizzle, it’s a dance party in your mouth. Dare we say, they might be the best side dish in the entire festival. We’d also like to order a vat of them and call it a day.
Corn Rib SeaWorld Orlando: Should You Try It?
At $10.99, the corn rib is one of the more affordable items at the festival, especially if you’re using a sampler lanyard. Also, if you’ve never tried a corn rib before, it’s worth the experience, especially for the Instagram content. Still, temper your expectations: this isn’t the BBQ hero we were hoping for. It’s more like a quirky sidekick with great potatoes.
