SeaWorld’s BBQ mac and cheese sounds great on paper. Our review from the 2025 Bands, Brew & BBQ Festival tells a different story.

We attended SeaWorld Orlando’s Bands, Brew & BBQ festival for two reasons: savoring the brisket and experiencing the bold flavors. What I didn’t expect was to be served a scoop of sadness masquerading as mac & cheese.
SeaWorld Orlando’s Bands, Brew & BBQ Festival 2025 is back, running through August 24, and it’s included with your regular park ticket. Each weekend blends live music, regional BBQ, and refreshing brews into a full-day summer celebration. Over 130 craft beers, cocktails, and brews await, ranging from Florida Avenue ales and fruity ciders to creative cocktails like the Frozen Sangria, Kansas City Smash, and Pub Grub Old Fashioned.
BBQ lovers can sample smoky favorites from Kansas City, Carolina, Texas, Memphis, and SeaWorld’s signature pit. New additions this year include the indulgent BBQ Sundae (pulled pork atop mashed potatoes, beans, and slaw), Smoked Chicken Tacos, Southern Smoked Turkey Collard Greens, Corn Rib, and Pretzel-wrapped Bratwurst. Additionally, guests can grab a sampler lanyard, featuring five samples for $45, ten samples for $65, and pass members receive 12 samples for the price of ten.
BBQ Mac and Cheese at SeaWorld Orlando

It all started innocently enough. We saw a Texas BBQ booth proudly advertising “Lone Star Hatch Chili Mac N Cheese”—a name that promised spice, Texas flair, and enough cheesy goodness to make me question my cholesterol. The menu description read, “Creamy Macaroni and Cheese topped with SeaWorld’s Hatch Chili.” Earlier in the day, we ordered a delightful Chicken Smoked Taco from this food and beverage booth. We had high hopes for SeaWorld’s BBQ mac and cheese, but sadly, it didn’t live up to the hype.
The stomachs were ready. Our taste buds were excited. However, our expectations were… too high.
We placed our order and were handed a paper bowl containing what can only be described as “mac & cheese’s introverted cousin.” It wasn’t bad, exactly. Just… there. Like someone had said, “Let’s do barbecue-style mac,” and then halfway through cooking, went, “Eh, close enough.”
The cheese was more of a suggestion than a sauce. The hatch chilis were present in the same way that an extra in a movie is “technically part of the cast.” We kept waiting for the flavor to kick in—some smoky depth, a hint of heat, even just a whisper of seasoning. Instead, it tasted like warm noodles (in fairness, they were served very warm) that had briefly made eye contact with a chili pepper. We saw SeaWorld’s Hatch Chili listed on the menu description as if it were something we should be familiar with. However, we do not recall having it before. Based on our initial bites, we were not impressed.
Service by SeaWorld Orlando Ambassadors

At this point, we would like to highlight that the service provided by the ambassadors at this booth has been exceptional. Still, as we ate, a nearby country song played a heartfelt ballad that unintentionally mirrored my emotional journey: full of promise, a little slow, and ultimately unremarkable.
The portion was small for the $10.99 price, which in this case felt more like a mercy than a rip-off. We finished it out of politeness to the experience, but my soul remained unsatisfied. Additionally, we didn’t feel nourished. We felt like we had been friend-zoned by lunch. Despite its spicy name, the BBQ mac and cheese lacked heat, depth, and excitement.
The intention of the chefs, probably, was to focus on the chili for flavor, trying to avoid the cheese flavor dominating. Sadly, if that was the intention, they overdid it. Additionally, the onions do not help this dish. In fact, they hinder what little flavor guests can forage from this theme park festival entrée.
Bands, Brew, and BBQ Festival: BBQ Mac and Cheese

We wondered as we ate this: why did this return from last year? In fairness, we did not order this last year. Perhaps it sold well last year, so they brought it back. However, we cannot recommend it solely because it is intended for picky eaters or those who avoid any spice in their meals. We sincerely hope that we just received a bad version of this dish. However, we doubt that.
In summary: If you’re at the Bands, Brew & BBQ at SeaWorld Orlando, skip the BBQ mac and cheese and find something that actually knows what it wants to be. Life’s too short for beige mac & cheese pretending it went to Texas once. The BBQ mac and cheese was a lowlight in an otherwise flavorful lineup of festival favorites.
