The Local Knowledge Cabin at Bier Fest serves up bold flavors like crispy chicharrón and BBQ pinchos. Also, there exists the bonus of sweet plantain mash worth the trip alone.

Bier Fest, Brews, and BBQ at Busch Gardens Tampa Bay is a celebration of craft brews, bold flavors, and the occasional “Huh, that’s an interesting choice” moment. One of the most intriguing stops this year is the Local Knowledge Cabin, a food and beverage location that proudly serves up dishes you don’t usually find on the average backyard grill menu.

This cabin sits away from most of the Bier Fest, Brews, and BBQ cabins. Guests will find it near Pass Member Landing. We recently tackled two of their most buzzworthy creations — and walked away with opinions as flavorful as the plates themselves.

Local Knowledge Cabin Grilled Crispy Chicharrón – $10.99

Crispy pork lovers, this one’s calling your name — although it might also be yelling “Onions!” while it does. The dish arrives with crispy pork topped with lime crema, pickled onions, chicharrón crumbles, guacamole crema, and a bed of sweet mashed plantains.

The pork itself? Solid preparation — not jaw-breakingly crispy, but enough bite to remind you it’s chicharrón. The sweet mashed plantains underneath were also a delightful surprise, offering a smooth, almost dessert-like sweetness that balanced the savoriness. In fact, the plantains brought more flavor to the plate than we expected, easily outshining some of the toppings.

Which brings us to the pickled onions — they’re everywhere this year. Busch Gardens. SeaWorld. I’m starting to think they have a secret onion sponsor. While they can add brightness, here they came on strong, overpowering the more delicate pork and plantain combo. However, we ended up eating around them to let the other ingredients shine. As for the “chicharrón crumbles,” we found ourselves wondering if they were there for texture or just moral support — they didn’t add as much crunch as anticipated. Still, the portion size is fair for the price, especially in theme park terms, and it’s a dish most guests probably couldn’t whip up at home without a lot of trial and error.

BBQ Grilled Pinchos (Beef Tips & Shishito) – $11.99

The second act at the Local Knowledge Cabin features marinated beef and shishito pepper kabobs, served over the same sweet plantain mash. These skewers were “good, not great,” which in theme park festival language means they won’t be winning awards, but they’re still worth trying if you’re in the mood for beef.

The shishito pepper brought a mild smokiness and also just enough bite to keep things interesting. Unfortunately, following the bold, layered flavors of the chicharrón dish didn’t do these pinchos any favors — they just felt more subdued in comparison.

Once again, the plantain mash stole the show. It’s the glue holding the flavor profile together here, giving each bite a soft, sweet contrast to the char on the beef and pepper.

A Note on the Sampler Lanyard

If you’re planning to snack your way through Bier Fest, the sampler lanyard is your best friend. You can purchase one for a set number of punches (typically 5 or 10), and each punch gets you a food or beverage item at participating booths.

Here’s why it’s worth considering:

  • Flat Price Advantage: Higher-priced festival items — like the $10.99 chicharrón or $11.99 pinchos — end up costing less per serving when you divide the lanyard’s total cost by the number of punches.
  • Flexibility: You can mix food and drinks, so your group can share a lanyard and try more dishes without committing to a single big meal.
  • No Surprise Totals: Once you’ve paid for the lanyard, you’re free to roam the festival without worrying about nickel-and-dime charges at each stop.

For the Local Knowledge Cabin, using a lanyard punch on either dish is a smart value move, especially since these items are on the pricier side for a festival portion.

The Local Knowledge Cabin is doing something different at Bier Fest — and we appreciate the risk. The Grilled Crispy Chicharrón is a festival highlight (just… maybe bring a fork to relocate those pickled onions), while the BBQ Grilled Pinchos are enjoyable but more of a supporting act. Still, if you want to taste without tanking your wallet, the sampler lanyard is the way to go. Busch Gardens may love pickled onions a little too much this year, but when the plantain mash is this good, we can forgive a lot.
