Flavors of Florida is a seasonal culinary event held at Disney Springs, celebrating the vibrant tastes and ingredients of the Sunshine State. Each summer, participating restaurants and kiosks offer limited-time dishes and drinks inspired by Florida-grown produce like citrus, strawberries, and seafood. Guests can savor everything from key lime desserts and orange-glazed entrees to refreshing cocktails infused with tropical fruits. The event showcases local partnerships and creative culinary twists, providing a delicious way to discover Florida’s diverse food culture. Flavors of Florida runs until August 10. It makes a must-visit for foodies looking to indulge in seasonal, sunshine-infused delights.

As a part of this event, eet by Maneet Chauhan, a counter-service restaurant, created a Cobia Bites menu item for Flavors of Florida. Of course, we went to try this unique-sounding dish. The menu description reads, “Cobia Bites with a Masala Santra Gastrique: Cobia coated in panko breadcrumbs and dusted with chaat masala topped with a masala Santra gastrique made with navel oranges, mustard seeds, cumin, garam masala, and Kashmiri chili powder.” These cost $11.95. Annual passholder discounts (10%) do apply.

That menu description sounds like it offers a massive variety of flavors. Could these pair together for a tasty dish? In simple terms, they can. Still, there are some flaws that guests might want to bear in mind.

What is Cobia?

These bites feature cobia. Guests should expect ten of them on top of the chaat. Cobia is a flavorful, firm-textured saltwater fish prized for its mild, buttery taste and versatility in cooking. Found in warm coastal waters, particularly in the Gulf of Mexico and the Atlantic Ocean, cobia is popular among both anglers and chefs. Its white flesh holds up well to grilling, searing, or blackening. Additionally, it pairs beautifully with citrus, herbs, and tropical salsas. Often compared to mahi-mahi or swordfish, cobia is rich in protein and omega-3 fatty acids, making it a healthy choice. Its clean flavor and hearty texture make it ideal for everything from fish tacos to upscale seafood entrées.

We thought the cobia tasted great in this dish. The panko breadcrumbs also enhance the overall menu item. The chaat masala at the bottom of the dish adds an Indian-style flavor and texture. Chaat masala is a tangy, aromatic Indian spice blend used to enhance a variety of snacks and street foods. Made from ingredients like dried mango powder, black salt, cumin, and coriander, it adds a zesty, savory kick. Sprinkled on fruits, salads, or chaats, it delivers a burst of bold, complex flavor.

We arrived on the first day of Flavors of Florida to try this item. We chose it over the other Flavors of Florida food item at eet by Maneet Chauhan, Crispy Flounder Sandwich with Santra BBQ Sauce. This happened since we had a long food day ahead of us with stops at places like Chef Art Smith’s Homecomin’ and Salt & Straw.

Our order took longer than usual to arrive at our table. Still, the presentation was excellent. Also, it was served very warm. The dish offers a robust flavor, capitalizing on the unique taste of the cobia. Nonetheless, the gastrique tasted underwhelming and inconsistent from one bite to the next.

Despite that, this Flavors of Florida item deserves consideration during your visit to Disney Springs this summer. In fairness, we wondered how well this fits with the Flavors of Florida theme. Still, most guests will enjoy this.
