Ranking Busch Gardens Dining: Why Zambia Smokehouse Has Fallen Down Our Priority List

When walking through Busch Gardens Tampa Bay, the aroma of open-pit wood smoke pulling you toward Zambia Smokehouse can be undeniably intoxicating. United Parks & Resorts’ theme parks usually offer a decent smokehouse-style quick-service option. It’s a classic theme park dining staple that has drawn hungry crowds for decades. Zambia Smokehouse even offers a view of the splashdown area for the SheiKra attraction.

On a recent visit to do a Zambia Smokehouse review, we stopped by to test out one of the heavy hitters on their quick-service menu: the Smoked BBQ Pulled Pork Sandwich.

We have tried this several times when utilizing All-Day Dining at Busch Gardens Tampa Bay. On some occasions, it has been a decent option, and other visits have involved some very odd preparation, as seen in a previous Zambia Smokehouse review.

Priced at $20.49 (before any discount or use of the All-Day Dining Plan) and served with a side of seasoned fries, the presentation initially looks like a barbecue lover’s dream. When the plate hits your hand, the first thing you notice is the visual layout. This is a significant portion of meat. The kitchen staff does not skimp on the pork, piling it high enough that it spills out from the edges of the bun. Unfortunately, as we detail in this Zambia Smokehouse review, that is where the compliments end. A mountain of meat means nothing if the execution fails, and sadly, this sandwich was a total miss.

Zambia Smokehouse Review: A Battle Lost to the Sauce

As we inspected the sandwich, it was clear that there was plenty of barbecue sauce layered both below and directly on top of the pork. However, the quality of this specific house sauce completely derails the entire meal. It features a heavy, flat vinegar background style that simply does not pair well with this pork. To be clear, we are not talking about a beautifully balanced, tangy Western Carolina or Eastern Carolina style sauce. This is just a basic, sharp vinegar flavor that overwhelms everything it touches.

The poor quality of the sauce completely ruins the pork, failing to give the meat a fighting chance to do its job. The bun itself doesn’t help matters either, landing at average at best. The bun serves as a standard, uninspired vehicle. However, it did hold up to the sauce without getting too soggy under the weight of the heavy-handed pouring.

When you take a bite and eat all the components together, the flavor profile is incredibly disappointing. Instead of a rich, smoky, and savory experience, you are left with a surprisingly bland pork sandwich that finishes with a harsh, lingering vinegar aftertaste.

How This Miss Could Be Easily Saved

The most frustrating part of this culinary misstep is how easily it could have been avoided. If the kitchen simply abandoned this house sauce and instead used the standard Sweet Baby Ray’s barbecue sauce available in the outdoor condiment dispensers, this sandwich would immediately be five times better.

Now, making that swap wouldn’t automatically skyrocket this item to the top of your priority dining list at Busch Gardens Tampa Bay. The pork itself would still need some work to overcome its underlying blandness. Still, switching to a reliable, sweet-and-smoky commercial standard would have at least made it a far better, far more enjoyable lunch.

The All-Day Dining Dilemma & Better Alternatives

Beyond the food on the plate, our visit highlighted some ongoing friction with the overall dining experience at this location. We witnessed a bit of drama at the registers with guests who didn’t understand the limitations of the All-Day Dining Deal at Zambia Smokehouse. There is plenty of clear signage posted around the queue indicating exactly what applies to the deal and what requires an exclusive upgrade fee (such as the brisket or specialty desserts). All the parties involved in this scenario spoke English very well, so the language barrier wasn’t the issue. It simply comes down to guests not paying attention to the rules of the dining plan.

However, beyond guest confusion, the structural changes to the menu are a valid cause for disappointment. Between the limited options currently available at Zambia Smokehouse for All-Day Dining users and the removal of previous standouts, like the Smoked Turkey Sandwich, which used to be a surprisingly great bite, this location has steadily fallen down our list of dining priorities.

If you are looking for a reliable quick-service meal that delivers on flavor when it’s open, skip the smokehouse line and head over to the BG Cuban Cafe. It offers a much higher standard of entrees and stands out as a far superior alternative for your park day.
