The Vienna-Style Pork Schnitzel is a familiar face for seasoned Universal event-goers. Schnitzel in some variety has appeared at the Mardi Gras event in previous years. Still, for the 2026 Mardi Gras: International Flavors of Carnaval season, it has returned to the San Francisco area with a point to prove.

What is Schnitzel?

At its core, schnitzel is a culinary technique involving a boneless piece of meat thinned with a meat mallet, coated in flour, dipped in beaten eggs, and finally dredged in breadcrumbs before being pan-fried. While it is a staple of German and Austrian cuisine, the term “schnitzel” technically refers to any meat prepared this way, including chicken, turkey, or even beef.

The most prestigious variation is Wiener Schnitzel, a name protected by Austrian law that can only be applied to dishes made with veal. When pork is used, as is common in many casual settings and festival booths, it is officially called Vienna-Style Pork Schnitzel (or Schnitzel Wiener Art). The hallmark of a perfect schnitzel is its “souffléd” crust; the breading should ripple and puff away from the meat slightly, rather than sticking flat to it. Traditionally, it is served with a slice of lemon to cut through the richness, accompanied by potato salad or lingonberry jam for a balance of tart and savory flavors.

At $11.99, we expected this portion to be one of the more substantial “small plates” in the park. The dish features a thin, pounded pork cutlet, breaded and fried until golden brown. However, we did not find this schnitzel as thin as we expected. That may be why the quality has fallen below that of previous versions. Either way, the portion size is smaller than previous years. Additionally, the portion size looks smaller than comparable dishes at this event.

We found the two times we ordered this that the chicken was dry and the breading lacked the flavor most guests will expect. Still, this year, the breading avoids the greasy “heavy” feeling that sometimes plagues mass-produced theme park schnitzel.

The accompaniments are what should elevate this dish. The potato salad is served cold in the traditional Austrian style (vinegar-based rather than creamy mayo), providing a sharp, acidic contrast to the fried pork. For the record, no one in our group enjoyed the potatoes.

Nonetheless, the lingonberry jam adds a necessary tart sweetness, while a quick squeeze of the provided lemon wedge brightens the entire plate. While schnitzel has appeared at previous events, this year’s version feels more refined. However, that does not equate to better quality. We’re not discouraging people from getting this, but it’s not a top item for Mardi Gras 2026.

The 2026 Mardi Gras celebration at Universal Studios Florida continues to expand its “International Flavors” theme, running daily through April 4. While the heart of the event remains the nightly parade and the massive bead-tossing tradition, the culinary expansion has turned the park into a legitimate food festival destination.

This year, the event features booths representing over a dozen countries, from the spicy staples of New Orleans to the savory meats of Brazil and the comforts of Austria. With live concerts on the Music Plaza Stage on select nights and the Tribute Store offering its usual high-level immersive shopping, the 2026 season feels like the most complete event to date.
