If you’re heading to Universal Orlando’s Mardi Gras: International Flavors of Carnaval this year, you’ll find that the culinary lineup has expanded far beyond the typical gumbo and beignets. One of the most talked-about stops is the Chile booth, which is serving up a dish that feels more like a signature entrée than a festival snack: the Verlasso “Fire” Salmon. Guests can find this at the Chile booth located on the bridge between Diagon Alley and Springfield inside Universal Studios Florida.

At $13.99, it is one of the higher-priced items on the festival circuit, but for those looking for a high-quality, protein-forward option, it might just be the “catch” of the day. Based on how much our group enjoyed the Hot Maple Lacquered Salmon from this event last year, we had high hopes for this. For the record, our only real criticism of salmon last year was the price point.

The dish features fire-roasted Verlasso salmon, known for its buttery texture and sustainable farming practices. It is paired with crispy potatoes and topped with a bright, fresh herb salsa.

  • The Salmon: The “fire-roasted” preparation gives the fish a subtle smoky char on the outside while keeping the center tender. It isn’t “fire” in the spicy sense, but rather “fire” in terms of the cooking method and the quality. Several Universal Mardi Gras booths utilize outdoor grills for food preparation. The Chile booth does that. One can tell based on the quality of the salmon.
  • The Potatoes: These provide a much-needed salty crunch. They aren’t just a filler; they are seasoned well enough to stand on their own but shine when dipped into the leftover juices from the fish.
  • The Herb Salsa: This is the MVP of the dish. It’s a zesty, chimichurri-style topping that cuts right through the richness of the salmon, providing a clean finish that makes this feel like a light, refreshing lunch even in the Florida heat.

It’s a sophisticated, well-balanced plate that feels like it belongs in a seated restaurant like Lombard’s Seafood Grille rather than a booth in the streets of Universal Studios Florida. Of course, this tastes better than most dishes we have had at Lombard’s Seafood Grille.

Universal Orlando’s Mardi Gras: International Flavors of Carnaval runs through April 4, 2026. This 57-night celebration transforms Universal Studios Florida into a global party, blending authentic New Orleans traditions with diverse cultures.

The centerpiece is the nightly parade, featuring twelve hand-crafted floats designed by Kern Studios. Guests can once again toss handfuls of beads and enjoy high-energy street performers. For a premium experience, the Mardi Gras Float Ride and Dine Experience allows guests to enjoy a three-course meal before securing a spot on a float to throw beads themselves.
