The wait is finally over for Chipotle fans. Chipotle Mexican Grill has officially announced the Chicken al Pastor return to restaurants across the U.S., Canada, the UK, France, and Germany. Starting Tuesday, February 10, the protein will be available for a limited time, marking a significant ramp-up in the company’s 2026 menu innovation strategy.
A Global Fan-Favorite Returns
First introduced three years ago as Chipotle’s debut global menu innovation, Chicken al Pastor quickly developed a following. The dish is prepared daily in small batches, featuring freshly grilled chicken tossed in a marinade of seared morita peppers and ground achiote. It is balanced with pineapple for a hint of heat and finished with fresh lime and hand-chopped cilantro.
“Chicken al Pastor built a passionate following, so we had to bring it back to the menu for our fans,” said Stephanie Perdue, interim chief marketing officer of Chipotle. “We’ve seen thousands of comments asking for its return because the unique, bold flavor goes perfectly with their favorite Chipotle order.”
Accelerated Innovation in 2026
The return of the al pastor chicken is just the beginning. Chipotle plans to accelerate its menu offerings this year, moving from its traditional two limited-time proteins per year to a schedule of three or four. The brand also plans to introduce new sides and dips throughout 2026.
Nevielle Panthaky, vice president of culinary at Chipotle, noted that these innovations are designed to keep the brand relevant. “Our team is focused on delivering new flavor experiences that are delicious, on-trend, on-brand, and operationally consistent,” Panthaky said. “Chicken al Pastor’s comeback is a preview of what’s in store this year at Chipotle.”
