Navigating the sea of purple, green, and gold at Busch Gardens Mardi Gras can be a quest for the perfect festival bite that feels even more intense than the drop on Kumba. As the sounds of jazz fill the air and beads fly from every direction, the irresistible scent of Cajun spices eventually leads every hungry traveler toward Cabin 7 – Jackson Square. This year, a key menu item is the Chicken Gumbo with Sweet Cornbread, a dish that promises a warm hug from the Bayou right in the heart of Tampa.

Now, gumbo is a sacred thing in New Orleans. It’s a labor of love that usually involves a roux so dark it has its own gravity. At a theme park festival, however, gumbo is often “stew’s slightly more adventurous cousin.” After sampling this year’s offering, we can confirm that while it won’t be winning any James Beard awards, it definitely won’t ruin your afternoon—provided you like your cornbread with a side of “average.” Also, you need to not be very hungry!

The Gumbo: A Bayou-ish Blend at Busch Gardens Mardi Gras $9.99

Let’s talk about the stars of the show: the chicken and the spices. The gumbo at Jackson Square is a hearty mix of chicken, vegetables, and Cajun spices. The chicken was surprisingly tender. We got none of that “over-processed nugget” vibe you sometimes find in mass-produced festival food. The “Holy Trinity” (onions, bell peppers, and celery) made a guest appearance, though they seemed to be more “working from home” than fully present in the bowl. In fairness, that may be due to the chicken’s prominence.

The spice level? It’s what I like to call “Florida Spicy.” It’s got a little kick, but it’s mostly just there to remind you that you aren’t eating a bowl of Campbell’s. Also, it’s a safe, approachable gumbo. It’s the kind of dish that says, “I know what a bayou is, but I’ve only ever seen one on the Travel Channel.” It was warm, savory, and perfectly fine, which is exactly what you expect when you’re eating out of a paper bowl next to a roller coaster.

However, our main concern involves the portion size. If we had tried, we could have finished this gumbo in four bites. Of course, we took smaller bites but the portion size is very small for festival item priced à la carte at basically $10.

The Sweet Cornbread: The Plot Twist

The real surprise was the Sweet Cornbread. Usually, cornbread at these events is either a dry brick that requires a gallon of water to swallow or a soggy mess. This cornbread, however, was genuinely sweet and served as a nice contrast to the salty, savory gumbo. It acted like a little yellow life raft floating in a sea of brown stew.

Was it the best cornbread we’ve ever had? No. However, did our group eat every crumb while sitting on a nearby bench watching a stilt-walker go by? Absolutely.

The Verdict: 3/5 Beads. The Chicken Gumbo is a solid, mid-tier festival option. It’s filling, flavorful enough to keep things interesting, and the cornbread is a sweet bonus. It’s an “average” win for anyone looking for comfort food between thrills. However, this is not shareable by any definition!

It’s a family-friendly way to experience the spirit of New Orleans without having to deal with the chaos of Bourbon Street.
