Busch Gardens Tampa Bay’s Bier Fest is in full swing, and with it comes an array of festival bites that range from creative to downright confusing. If you’ve followed our coverage, you know that some items, like the so-called Currywurst Sauerkraut, leave us scratching our heads because they don’t quite match their name. That’s why we’re happy to report that the Chocolate Pecan Tart delivers exactly what the menu promises: chocolate, pecans, and plenty of indulgence.

A Sweet Stop at the Outta the Box Cabin

You’ll find the Chocolate Pecan Tart at the Outta the Box Cabin, one of Bier Fest’s better food booths. This cabin also serves the creative Brisket Mac in a Waffle Cone and the flavorful Mini Bison Slider. That lineup makes it a great one-stop shop for guests looking to balance savory and sweet in a single stop.

When we visited, the Outta the Box Cabin did have a couple of hiccups. For one, they weren’t offering sampler lanyards, which many guests rely on to try multiple items at a discount. In addition, the stand lacked knives, an odd omission when you’re serving a tart that would benefit from being cut cleanly. Luckily, we managed with just a fork, and it didn’t diminish the experience.

First Impressions

The Chocolate Pecan Tart arrives served warm, and the first thing that greets you is a pleasant, nutty aroma. The tart itself also is filled with a rich dark chocolate ganache topped with toasted pecans and a sprinkle of sea salt. It looks simple, but sometimes simplicity is exactly what works at a theme park festival. Unlike some of Bier Fest’s more experimental dishes, this tart doesn’t try to reinvent the wheel. Instead, it leans on a tried-and-true combination of flavors that most guests will immediately recognize and enjoy.

The first bite is undeniably chocolate-forward. The ganache is thick, smooth, and decadent, and it quickly overwhelms the other elements. The toasted pecans add some welcome crunch and nuttiness, but the tart shell falls short. It’s serviceable but lacks the buttery flakiness that would make it stand out.

Still, the contrast between the sweet chocolate, salty crunch, and warm temperature makes this dessert more than worth sampling. It’s not a dish that will wow you with complexity, but it will satisfy a sweet tooth after trying some of Bier Fest’s heavier or meatier offerings.

The Chocolate Pecan Tart deserves credit for avoiding this pitfall. It’s straightforward, reliable, and fits well into the festival experience.

That said, it’s not the kind of dish you’d plan your day around. Instead, it works best as part of a “combo stop.” Pair it with the savory Brisket Mac Cone or the Mini Bison Slider, and you’ve got yourself a well-rounded festival meal without trekking across the park.

Bier Fest Basics

For those planning a visit, Bier Fest runs on weekends through September 1, 2025. The event combines an impressive lineup of seasonal craft beers, cocktails, and more than a dozen food cabins scattered around the park. Live music and entertainment round out the festival atmosphere, making it one of Busch Gardens Tampa Bay’s most popular seasonal events.

Food and drink portions are available for individual purchase, but savvy festival-goers usually opt for a sampler lanyard, which provides a set number of items at a discounted price. As noted, not every booth had them available during our visit, so it’s worth asking at guest services or checking other cabins if you don’t see them.

The Chocolate Pecan Tart may not reinvent festival desserts, but it doesn’t need to. It’s warm, chocolatey, and exactly what it claims to be. While the tart shell could be better, the rich chocolate and pecan filling more than make up for it.
