We ventured into Busch Gardens Tampa Bay’s Bier Fest 2025 on opening weekend ready for brews, BBQ, and the kind of bold eats that pair perfectly with a Florida summer sweat. Tucked inside the charmingly rugged Outta the Box Cabin was a dish that caught our carnivorous attention: Mini Bison Sliders with Honey Chipotle Slaw.
Outta the Box Cabin at Bier Fest Busch Gardens
The Outta the Box food and beverage cabin sits near Springs Taproom at Busch Gardens Tampa Bay. This location has not been used often for festivals at the theme park. In fact, the last time we remember getting food from this Busch Gardens Tampa Bay spot was for a media event announcing that TOMA would become a permanent quick-service location at Busch Gardens Tampa Bay. For the record, the TOMA at Orang Cafe serves as an excellent step-up for cuisine at Busch Gardens. Additionally, the TOMA at Orang Cafe, near Wild Oasis, has recently been added as an option for the All-Day Dining Plan.
The four food options at the Outta the Box Cabin include:
- Brisket Mac (in a Waffle Cone) – Mac and cheese topped with smoked brisket in a waffle cone
- Mini Bison Sliders with Honey Chipotle Slaw – Bison sliders with chipotle-honey slaw
- Grilled Stuffed Avocado – Grilled avocado with brisket, roasted corn, and cilantro cream
- Chocolate Pecan Tart – Dark chocolate ganache tart with toasted pecans and sea salt.
Mini Bison Sliders Review
For this snack, we naturally opted for the Mini Bison Sliders. This simple-sounding festival food option called our name. Still, we knew this could turn out badly.
Let’s break it down:
We received one little bison burger, snuggled into a soft slider bun, as if it were ready for a nap after a hard day of stampeding. But then—bam!—that chipotle-honey slaw comes in like a zesty uppercut. Sweet, smoky, tangy, and just spicy enough to say, “Hey, I’m from Tampa and I’ve got opinions.”

However, you might be asking this question: “Why did you only get one slider if it says ‘sliders” in the menu description?” Well, we have asked similar questions about other Bier Fest festival food we have ordered and reviewed. This pattern of inaccurate menu descriptions plagues the 2025 Busch Gardens Tampa Bay Bier Fest Brews & BBQ event that runs on select days through September 1.
Sure, the online menu indicates “sliders.” This $9.99 festival item showed the word “sliders” on the in-person menu. However, the display at the food and beverage cabin showed only one slider. In fairness, the official press release photos only show one slider. Guests should bear this in mind when deciding on the value of this option. Back to the flavor review!
Bier Fest Brews & BBQ Flavor
The slaw-to-meat ratio? Dangerously perfect. At one point, the whole thing tried to escape out the sides, slaw first, like it knew it was too good to be contained. You’ll definitely need napkins, or a poncho.
The bison itself was lean but flavorful, with that signature wild edge that says “I’m not beef, and I’m proud.” And if you’ve never eaten something that made you feel simultaneously rugged and adorable, this is your moment. Still, it does get overpowered by the slaw.
In short:
- Would we ride a rollercoaster right after eating this? Questionable.
- Would we elbow a stranger in line to get them again? Also very questionable
- Are they one of the best bites at Bier Fest? That is still up for debate!
