This cult-favorite bakery is once again serving up limited-time cookies, cakes, and cold brews for February 2026 — plus seasonal merchandise that’s perfect for collectors and fans alike. Lines can be long, but the rewards are delightful.

The first day of February means out with the January cookies and cakes and in with the new seasonal options. Sorry, fans of the Banana Box Pie Cookie, it has left us to perhaps return in the future. So what do we get for February 2026?

Each February that Gideon’s Bakehouse has been operating at Disney Springs, the cookie of the month has been the Eternal Flame Cookie. Most Gideon’s Bakehouse fans expected this to return for February 2026. Many were so confident that they made requests of friends to pick some up for them early in the month.
The Eternal Flame Cookie plays on Valentine’s Day themes with a Gideon’s Bakehouse twist. A rich chocolate base spiced with a house mix (ancho, cayenne, cinnamon), kissed with cherry notes, and topped with chocolate-covered cherries—a spicy-sweet Valentine’s vibe. Last year, this cookie came with an additional limited-time option, White Chocolate Caramel Macadamia Nut Cookie. That cookie features salted caramel baked right into the dough, finished with white chocolate and macadamia crumble. So what Gideon’s Bakehouse February 2026 limited-time items are fans getting this time?

As expected, the Eternal Flame has returned for February 2026. Along with it, the Strawberry Delight Cookie returns in February 2026. It was also a February limited-time cookie in 2024, along with the Eternal Flame Cookie. Additionally, it was available for a very limited time during part of February 2025.
The Twist!
However, we have a twist this year. The Eternal Flame Cookie will only be available on the weekends in February. That means fans of that cookie will need to venture out on Saturday or Sunday. It will be available only on weekends in February at both locations. Limit two per person. While supplies last each day
The Strawberry Delight Cookie at Gideon’s Bakehouse is a seasonal masterpiece designed for the “month of love.” Weighing in at nearly half a pound, this treat features a vibrant dough made from scratch with housemade strawberry puree—no artificial extracts or dyes in favor of natural fruit.

To enhance the experience, each cookie is finished with a dusting of strawberry-infused sugar, providing a delicate crunch. The standard expectation among fans was that the Eternal Flame Cake Slice would return to appear on Wednesdays and Saturdays in the Gideon’s Bakehouse February 2026 rotation. That cake consists of a three-layer chocolate masterpiece with red-cherry buttercream and spicy chocolate fudge layers, for that classic February heat and sweetness. Additionally, last year, guests had two limited-time cakes to enjoy in February,
Based on that, Gideon’s Bakehouse fans anticipate a return of the Strawberry Cream Cake. The Strawberry Cream Cake at Gideon’s Bakehouse is a breathtaking seasonal dessert that defines the “month of love.” This three-layer masterpiece features a soft, delicate strawberry cake base made with real strawberry puree, ensuring an authentic fruit flavor without any artificial dyes or extracts.

Each layer is generously smothered in a rich, fluffy strawberry buttercream that doubles down on the berry theme. To balance the sweetness, the cake is accented with silky ribbons of dark chocolate ganache, creating a flavor profile reminiscent of a chocolate-covered strawberry. Since it relies on natural ingredients, the vibrant pink hue and deep fruit aroma make it a standout for fans seeking a fresh, decadent alternative to traditional chocolate cakes.
At the time of writing, we do not have official confirmation that these cakes will be available in February 2026. We will update when that becomes official.
UPDATE (8:37 a.m. February 1, 2026): Both cakes will be part of the cake slices rotating menu.
