We Tried Gideon’s Bakehouse’s New Blueberry Lemonade Cake (and We Have Thoughts)

Is the new Blueberry Lemonade Cake at Gideon’s Bakehouse worth the $11? We tried this limited-time May 2026 cake, and have a review, including ingredients, serving tips, and our verdict.

Gideon’s Bakehouse needs no introduction to the Walt Disney World theme park faithful. The Disney Springs institution has built a reputation on its massive cookies and lavish cake slices, drawing queues every day of the week. So when a brand-new Blueberry Lemonade Cake appears on the limited-time roster, we knew we needed to try it.

However, it is only available on Wednesdays and Saturdays this month. Still, we made our way to Gideon’s on a Wednesday to get our hands on this newcomer. Does it stand shoulder-to-shoulder with other Gideon’s Bakehouse cake slice offerings?

Short History of Gideon’s Bakehouse

The story of Gideon’s Bakehouse reads like something out of a storybook. In fact, it began with one. Owner and creator Steve Lewis first encountered the name “Gideon” inscribed in what he believed to be a Victorian-era cookbook from the late 1800s, its margins crowded with doodles and handwritten notes. That name, and the influence those pages carried, became the foundation of an entire identity.

The original Gideon’s Bakehouse opened in October 2016 at Orlando’s East End Market with a single location, a single employee, and an $800 starting budget. It was a wildly improbable beginning for what would become one of the most talked-about bakeries in Florida. Word spread fast!

The inevitable next chapter arrived with the opening of a second location at Disney Springs, an elaborately themed space in The Landing district. Gideon’s Bakehouse acknowledges that it operates more like a busy theme park attraction than a traditional bakery. Gargoyles perch above the entrance. The aesthetic feels a merging of Victorian and Gothic. Even a virtual queue gets utilized on rare occasions, just like for brand-new theme park attractions.

The Disney Springs location opens daily at 10:00 a.m. A queue to enter the bakery usually develops soon after 9:00 a.m. when the Disney Springs parking garage security opens. That queue remains all day with Gideon’s Bakehouse closing at 11:00 p.m. or later.

The Cakes at Gideon’s Bakehouse

While the cookies may have made Gideon’s Bakehouse famous, the cake program is what keeps serious dessert enthusiasts coming back. Every slice is a three-layer affair. They are generously portioned, deeply loaded with buttercream, and intentionally designed to be shareable (though solo consumption is equally celebrated). At $11 per slice, they represent legitimate value by theme park standards, with places like The Cake Bake Shop charging twice as much for comparable products.

The signature move of the Gideon’s Bakehouse cake program is buttercream, and a lot of it. Where many bakeries treat frosting as a finishing touch, Gideon’s Bakehouse builds entire flavor identities around it. For example, the Double Frosted Cake line takes this philosophy to its logical extreme: three-layer cakes dressed in two layers of buttercream, rotating daily and ranging from Banana Peanut Butter to limited-edition releases like the Blueberry Lemonade Cake. These cakes by any measure feature an absurd amount of frosting. However, that is entirely the point.

The cake calendar operates on a rhythm that rewards the attentive guest. Wednesday and Saturday are the days when new and limited-time cake slices tend to appear, making those the prime days to visit if you’re hunting something specific.

What distinguishes the Gideon’s Bakehouse cake program from many competitors is a commitment to scratch-made, natural ingredients. The bakery uses no store-bought syrups in its coffee drinks, and that same philosophy extends to its baked goods: flavors come from real fruit, actual nuts, and genuine dairy. The result is a richness that synthetic flavoring cannot replicate, and it is detectable in every bite. Whether a Gideon’s Bakehouse cake slice ends up being your kind of sweet treat, there is no denying the natural ingredients served with care.

The Blueberry Lemonade Cake: What’s Inside

The Blueberry Lemonade Cake is a visually striking creation. That deep blueberry buttercream stands as impressive. Gideon’s Bakehouse always had a flair for dramatic presentation, and this slice delivers on that.

Flavor-wise, the Blueberry Lemonade Cake performs exactly as advertised. The buttercream is rich and deeply fruity without tipping into artificial sweetness. The lemon curd swirl provides welcome brightness and acidity that cuts the richness of the frosting. The blueberry jam layers deliver genuine fruit flavor rather than a syrupy approximation. The graham cracker crumble is the kind of thoughtful textural touch that elevates the experience.

Of note, Gideon’s Bakehouse recommended special care with this cake. The bakery recommends: “Keep this one cool until about an hour before cutting slices. You want the buttercream to be soft but not room temperature.”

Our Experience with the Blueberry Lemonade Cake Slice

The Blueberry Lemonade Cake is, at its core, a very good Gideon’s Bakehouse cake. Nonetheless, that leads to mild disappointment for those (of us) hoping for something that truly distinguishes itself. The buttercream is lush, as it always is at Gideon’s Bakehouse. The layers are generous, and the quality is impeccable.

Still, the same consistent standard that makes every Gideon’s Bakehouse cake slice at Disney Springs worth the price of admission is also what prevents this particular offering from shining as a true standout. Most guests who purchase a slice will not be disappointed. They will enjoy a well-constructed cake that represents genuine value by theme park dining standards. Yet they may simply not find themselves talking about it weeks later.

It is worth noting that Gideon’s Bakehouse also released a Blueberry Lemonade Cookie for May 2026. That brand-new creation drew us to Disney Springs on May 1 to be the first person in line to try it. We felt it was a must-try. In fact, we bought more Blueberry Lemonade Cookies on the same day we bought the Blueberry Lemonade Cake.

That cookie manages to carve out a more distinctive identity within the Gideon’s Bakehouse lineup. out the other. If you find yourself choosing between the two this May, the cookie edges ahead on memorability. The cake, however, wins on sheer substance.
