A new month means a new cookie at Gideon’s Bakehouse. Earlier today, Gideon’s Bakehouse announced the new cookies, cakes, and cold brews for May 2025. In addition, fans received information about the “Halfway to Halloween” promotions running on weekends in May at Gideon’s Bakehouse. We visited to try the 2025 version of the Coffee Toffee Cookie.

Our visit to Gideon’s Bakehouse at Disney Springs occurred on the morning of May 1, 2025. We arrived around 9:15 a.m. At that point, a queue had already formed for the scheduled 10:00 a.m. opening. We were in the queue behind about 15 people. Once Gideon’s Bakehouse opened a few minutes before 10:00 a.m., we were among the first people entering the building.

The fan-favorite cookie, the Coffee Toffee Chocolate Chip Cookie returned for May 2025. This popular cookie has been sold every year at some point that the Disney Springs location has operated.

This cookie features a distinct coffee flavor with the classic Gideon’s Bakehouse vanilla bean cookie base. The menu description reads, “This handmade almost 1/2 pound Cookie is filled and topped with freshly ground beans from our friends at Lineage Coffee Roasting and complimenting chunks of Toffee (for crunch) and Chocolate (for smooth) in our Vanilla Bean Cookie! Finished with a sprinkling of sea salt harvested from Mourning Joe’s tears, this one will keep your spirit fueled!”

What Did We Experience With the May 2025 Version of the Coffee Toffee Cookie?

Just to let you know, our reviewer does not enjoy coffee, even good coffee, which this is! However, our reviewer has tried this cookie several times before, so they knew what to expect. These cookies are very coffee-forward.

The key flavors are the vanilla bean cookie base, which is always very tasty and makes a good palate for other flavors, the coffee, toffee pieces, and the chocolate chips. During our recent taste test, the chocolate chips started melting very early, which surprised us since that does not usually happen with this cookie.

Powerful Flavors

The flavors of this cookie are spot on. You get what the menu description states. In our first few bites, the toffee flavor lagged behind. However, that imbalance corrected itself as we ate more of the cookie. The rest of the cookie offered the strengths of a Gideon’s Bakehouse cookie, as we anticipated.

Nevertheless, coffee fans will love this cookie, so it makes sense that it remains popular with fans. Still, people who prefer to avoid coffee flavor will find this cookie to be just okay. They should choose one of the other Gideon’s Bakehouse options.
