Gideon’s Bakehouse brings back the fan-favorite Coffee Toffee Chocolate Chip Cookie for May 2025, plus new limited-edition cakes and cold brews to enjoy. Also, it is Halfway to Halloween time!
With April ending, new limited-time cookies, cakes, and cold brews will be available in May 2025. We say goodbye for now to the Carrot Cake Cookie and welcome in a new cookie for May.

Last year, the May cookie was the Peanut Butter Cold Brew Cookie. This consisted of a “Peanut butter cookie laced with freshly ground decaf espresso and covered in chopped Reese’s Peanut Butter Cups and Reese’s Pieces.” Based on the previous May limited-time cookies at Gideon’s Bakehouse, we expected something with peanut butter in it for May 2025. Three of the last four May cookies have involved peanut butter.
Surprise! A Fan-Favorite Cookie Returns for May: Coffee Toffee Chocolate Chip Cookie and Coffee Toffee Cake
Despite our expectation of a peanut butter base cookie, the Coffee Toffee Chocolate Chip cookie returned. We see this cookie arrive about once a year at Gideon’s Bakehouse. This cookie features a coffee flavor. The menu description reads, “This handmade almost 1/2 pound Cookie is filled and topped with freshly ground beans from our friends at Lineage Coffee Roasting and complimenting chunks of Toffee (for crunch) and Chocolate (for smooth) in our Vanilla Bean Cookie! Finished with a sprinkling of sea salt harvested from Mourning Joe’s tears, this one will keep your spirit fueled!”
Also, the May 2025 cake available on Wednesdays and Saturdays is the Coffee Toffee Cake.
Halfway to Halloween and May 2025 Cold Brew
In addition to a new monthly cookie and cold brews, May means a “Halfway to Halloween” promotion. At this time of year, Gideon’s Bakehouse fans can enjoy seeing and buying special merchandise and some very limited treats. Fans got their Halfway to Halloween announcement!
On social media, Gideon’s Bakehouse posted this: “REJOICE for it is Halfway to Halloween, and this year, the party is only at Gideon’s Bakehouse, so we’re celebrating throughout May! Barnabas Mephistophelittle has returned, and per his yearly tradition, he brings you a dreadfully good selection of tasty treats and titillating tricks! Expect some never-before-seen desserts and old favorites each weekend of May and merch drops at the beginning and end of the celebration!
