The November 2026 Gideon’s Bakehouse menu is official, and the Spookhouse has packed up its monsters for another year. After a tenth anniversary October built around the Frankenstein and Bride of Frankenstein treats (here is our October 2026 Gideon’s Bakehouse guide if you missed it), November is when the gothic bakery in Disney Springs traditionally trades its ghouls for harvest flavors and Thanksgiving cakes.

For November 2026, Gideon’s Bakehouse fans can enjoy a brand-new flavor, Crisp & Crumble. This is what Gideon’s Bakehouse says about this brand-new never-before cookie:
Gather around, friends, for we have an extra special treat for you this November. Please allow us to unveil the Crisp & Crumble, our autumnal enchantress of an almost half-pound Gideon’s Cookie. She arrives cloaked in the comforting flavors of apples, toasted sugar, and a whisper of fall spices, crowned with a brown butter oat crumble and draped in a silken vanilla glaze. Handmade for you from scratch, it is a true artisan creation.
Gideon’s Bakehouse also declares this to be all the flavors of fall in one cookie!

In November 2026, Gideon’s Bakehouse will offer a Dutch Apple Pie Cake. This cake features apple spice cake layers covered with a salty-sweet apple caramel buttercream. It also includes a traditional apple pie filling and the distinctive oat crumb topping you’d expect from a Dutch apple pie. Guests can pick up a slice in stores every Wednesday and Saturday this month.
Also, for November 2026, we will have the chance to buy a slice of Hot Cocoa Cake on select days. This cake features soft chocolate cake, double-frosted with a unique new hot chocolate mix buttercream that has a slightly gritty texture. That combines with a marshmallow buttercream layer with both mini marshmallows and micro mini marshmallows, all covered in white chocolate ganache. We do not know which days this will be available yet.

October gets the monsters and the merch frenzy, but November has quietly become one of the more interesting months at Gideon’s. Over the years it has delivered the bakery’s first pumpkin cookie, a run of Thanksgiving ready cakes, a Day of the Dead inspired cookie that keeps sneaking back, and even an early start on Christmas. Here is how each November has played out at Disney Springs.
November 2021: The Chocolate Churro Cookie
Gideon’s first November at Disney Springs featured the limited Chocolate Churro Cookie, also known as the Calavera Cookie. The bakery then turned it into cake for one weekend only, selling Chocolate Churro Cake slices on November 27 and 28, and it dropped its first ever Gideon’s baseball cap in small numbers
November 2022: Pumpkin Finally Arrives
For years, fans asked founder Steve Lewis for a pumpkin cookie, and for years he declined. That changed in November 2022, when the Pumpkin Bread Chocolate Crumb Cookie debuted as the monthly limited cookie. It instantly became a fall favorite, and Gideon’s later moved a version of it into September (the September 2026 menu featured the Pumpkin Bread Chocolate Chip Cookie).
November 2023: Pumpkin Cookie and Pumpkin Chai Spice Cake
The Pumpkin Bread Chocolate Crumb Cookie returned at both locations, limited to two per person per day.It was joined by a new Pumpkin Chai Spice Cake sold by the slice on Wednesdays and Saturdays and as a whole cake preorder for Thanksgiving, with pickup only at the East End Market shop.Early in the month, the Chocolate Churro Cookie came back as a sell out bonus cookie.Then on Black Friday, Gideon’s jumped straight to Christmas, releasing its December cookies (including the Kris Kringle Cookie) and Krampus Cold Brew a week early along with a new trading card.French Toast Cold Brew was the monthly pour.
November 2024: Pumpkin Chocolate Chip Cake
The Pumpkin Bread Chocolate Crumb Cookie returned for a third straight November.The headline was a brand new Pumpkin Chocolate Chip Cake finished with an Orange White Chocolate Ganache drip, pitched as a Thanksgiving centerpiece, and French Toast Cold Brew stayed on for a second month.
November 2025: A Month of Stuffed Sugar Cookies
Gideon’s went all in on its Stuffed Sugar Cookies, which had only appeared on scattered weekends before, and rotated a new flavor every week:
- November 1 to 7: Vanilla Cream Cheese, the original stuffed cookie, a vanilla bean sugar cookie filled with cream cheese frosting and rolled in sugar crystals
- November 8 to 14: Chocolate Peanut Butter
- November 15 to 21: Birthday Cake
- November 22 to 30: Pumpkin Cheesecake
The cake was the new Dutch Apple Pie Cake (apple spice layers, apple caramel buttercream, apple pie filling, and an oat crumb topping), sold Wednesdays and Saturdays through Thanksgiving. The Chocolate Churro Cookie returned for the opening weekend only, Mexican Chocolate Nitro Cold Brew was the Disney Springs pour, and Samuel the Scarecrow led the merch lineup.
November 2026 Gideon’s Bakehouse: A Tenth Anniversary Year Keeps Rolling
November 2026 lands right after Gideon’s marked ten years since the original East End Market shop opened in October 2016. In late October, the bakery revealed its first Artist Edition Trading Card Series, with up to 70 new cards reimagining the creatures of Gideon’s through a range of illustrators from comics, books, and film. Gideon’s Bakehouse also shared that its longtime art director is leaving to work with Disney, that existing Morsel collectible plans continue through the end of 2026, and that an expanded creative team will take over in 2027.
The anniversary also brought a National Dessert Day collaboration with Kelly’s Homemade Ice Cream, and a reminder from Lewis that Hot Cookie Hour still runs every day at Disney Springs.Meanwhile, the savory sister concept Six Ravens celebrated its grand opening at Disney Springs in October, so guests now have two Gideon’s lines to choose from.
What Guests Need to Know Before Visiting Gideon’s Bakehouse
Locations and Hours
- Disney Springs: In The Landing. Open Sunday to Thursday from 10 a.m. to 11 p.m., Friday and Saturday from 10 a.m. to 11:30 p.m., and open every day of the year.
- East End Market: 3201 Corrine Dr., Orlando, in the Audubon Park neighborhood. Open 10 a.m. to 7 p.m. daily and closed on major holidays
- Gideon’s sits outside the parks, so no theme park ticket is needed, and Disney Springs parking garages are free.
Prices
Last October, a cookie cost $7-$7.50, a cake slice $11, and a cold brew $6.50-$8.50
Limits and Lines
- Monthly limited cookies are capped at two per person, and cake slices at two per person per flavor, while supplies last.
- Limited cookies and the Wednesday and Saturday cake can sell out, so earlier in the day is the safer play.
- Gideon’s has used a virtual queue that texts guests when it is their turn, but it rarely needs one anymore, except for special one-day or weekend only offerings.
- Hot Cookie Hour runs daily at Disney Springs from 2-3 and 7-8.
Preorders and Thanksgiving
- The Disney Springs shop does not take cookie preorders. Local preorders are picked up at East End Market.
- Preorders require a minimum of a six cookie assortment, 12 cookie bites, or one whole cake, with at least three calendar days’ notice.
