From lively festivals to dance competitions to streets filled with reggae beats and traditional eats, Jamaica’s Independence Day is an unforgettable occasion, and, according to Chef Antwan Dickerson, will be an adventure like no other here at Universal Orlando Resort.
“I want guests to be able to come in, smell the aromas of the grill, see the guests having fun, the music, the live band going — the celebration as a whole,” Chef Antwan says. “Bob Marley’s restaurant really is an experience … and guests should leave here feeling like they were a part of it.”

“Jamaican culture is really big on street food,” Chef Antwan says. “I can probably say they’re grilling every single day.”

Skewers

Hearty protein on a wooden stick? Does that sound good? If so, guests can enjoy the freedom of flavor with their choice of New York Steak, Chicken, Prawns, or Plant Base “Steak” Skewers. Not only are these skewers authentically Jamaican in taste, but they’re also visually representative of Jamaica.
Chef Antwan says each skewer is arranged with an assortment of bell peppers and pineapple to represent the colors of the Jamaican flag. Relish the taste of these skewers alone, or enjoy them with a side of breadfruit “tostones,” roasted corn, Jamaican festival (sweet fried dough), coleslaw, and pomegranate BBQ sauce.
Ackee & Saltfish
What better way to celebrate Jamaica’s Independence Day than with the country’s own national dish? Ackee & Saltfish is a Jamaican breakfast staple made with sautéed ackee fruit, salted codfish, breadfruit “tostones,” roasted peppers, tomatoes, and coriander.
Chef Antwan says celebrating Jamaica’s Independence Day at Bob Marley’s really allowed him to learn the depths of different cultures.
“I grew up in a huge history of soul food … and being able to tap into that culture helps me understand why the food is cooked the way it is — why the flavors come together the way they do,” he says. “It’s really fun to just be able to zero in and learn.”
