If you haven’t yet made the pilgrimage to the West Side of Disney Springs to visit Salt & Straw Disney Springs, this is your sign. The Portland-born artisan ice cream shop is rolling out a brand-new monthly series. Still, before we get into the review, let’s talk about how this scoop shop got here, because the Salt & Straw origin story is as rich as its ice cream.
The Origin Story: Ice Cream Made in a Basement

Salt & Straw was founded in 2011 by cousins Kim Malek and Tyler Malek. Neither of them had ever made ice cream professionally before. Kim, a former Starbucks executive who had spent years helping build that brand’s “third place” community concept, had long dreamed of opening a neighborhood gathering spot in Portland. Tyler, the culinary-minded cousin, moved in with Kim and immediately got to work developing flavor recipes using secondhand ice cream makers. Their very first customers were served the now classic flavors, Chocolate Gooey Brownie and Sea Salt with Caramel Ribbons, out of a garden trough on Alberta Street in Portland’s arts district.
Three months after launching as a food cart, the cousins opened their first brick-and-mortar shop. The idea spread quickly. Today, Salt & Straw operates across seven states with more than 1,200 employees, has partnered with Alaska Airlines as their exclusive ice cream brand, and counts Dwayne Johnson among its investors. The name, by the way, is a nod to how ice cream was made the old-fashioned way: frozen with rock salt and insulated with straw. Classic roots, wildly modern execution.
Salt & Straw’s relationship with Disney started at Disneyland Resort’s Downtown Disney District, where the brand found a natural home among foodie-forward guests. The Salt & Straw Disney Springs location at Walt Disney World opened in April 2022 and brought the same rotating, story-driven menu to Central Florida, along with some Florida-exclusive collaborations you won’t find anywhere else.
What Makes Salt & Straw Different?

Most ice cream shops have a menu. Salt & Straw also has a philosophy. Co-founder Tyler Malek, now the brand’s head of innovation and author of the just-released America’s Most Iconic Ice Creams cookbook, approaches every flavor as a form of storytelling. Each scoop is designed to reflect a relationship: with a local farmer, a neighborhood artisan, a seasonal ingredient, or a cultural tradition.
The Salt & Straw Disney Springs location fully leans into this. In addition to classics like Honey Lavender, Sea Salt with Caramel Ribbons, and Strawberry Honey Balsamic with Black Pepper, the shop offers rotating monthly limited-edition series that redefine what ice cream can be. Past series have included collaborations with American microbreweries, an “Upcycle” series (or Waste Less Series) built around food waste, and flavors co-created with Portland schoolchildren.
The Disney Springs location has also featured uniquely Florida collaborations, like a flavor made in partnership with The Salty Donut, a Miami-born craft donut shop. The butterfat content is maximized for texture. The ingredients are sourced with intention, about 70% from “first-generation Black, Indigenous, and People of Color farmers.” Each scoop comes with a story.

Salt & Straw Disney Springs has earned its cult following, but it’s not for everyone.

- Monthly limited flavors disappear quickly and rotate on a schedule, so your favorite from a past visit may be gone
- Parking and crowds at Disney Springs can add significant wait time before you even reach the shop
- Scoops, while generous, can melt fast in Florida heat. Plan accordingly!
Salt & Straw Disney Springs May 2026 Flavors: Our Most Recent Experience – Saffron Milk and Wildflower Honey Ice Cream
Now that we have a good concept of the event of getting ice cream at Salt & Straw Disney Springs, how did our visit on the first day the May Flowers Series was available go?
The Salt & Straw Disney Springs May 2026 Flavors include:

- Jasmine Milk Tea With Almond Stracciatella – Made by infusing fine jasmine tea in cream and sugar and lacing the ice cream with slivers of almonds coated in chocolate.
- Strawberry Tres Leches – Strawberry ice cream and strawberry jam create a deep flavor that stands up to the richness of cream and sugar. Vanilla and cinnamon come into play through a spiced tres leches cake, soaked in three kinds of milk for a melt-in-your-mouth cake swirl.
- Rhubarb Crumble With Toasted Anise – Rhubarb jam streaked through vanilla ice cream and topped with toasted anise crumbles. Guests get an ice cream with a hit of acidity, caramelized sweetness, and a hint of licorice.
- Saffron Milk With Wildflower Honey – This is made as a sherbet, adding to the density. Tyler Malek, the guru of ice cream making at Salt & Straw, states that the flavor will hit you based on the careful ice cream preparation. Guests should expect a unique combination.
- Coffee Chamomile Sherbet (vegan) – A fruity, floral sherbet made with cold brew coffee and a chamomile tea, churned with coconut cream and oat milk.

The only 100% new flavor, not sold at Salt & Straw Disney Springs before, is the Saffron Milk With Wildflower Honey. So, we had to try it, right?

We went into this dining review with some hesitation since this ice cream flavor was most likely to be either magical or very much less so. Also, for perspective, we did not sample it before trying. We did this because we knew it was the logical ice cream option to review. We were committed to the craft, for better or worse!
From the promotional material, we knew to expect a very bright-looking ice cream. That is what we got! The promotional material indicated that this ice cream was supposed to “pop.” For sure, the color pops. However, the flavor did not scream Salt & Straw!

While this was an incredibly well-prepared ice cream treat, it lacks the powerful in-your-face flavors most guests expect at Salt & Straw. In fairness, it tasted exactly as one would expect based on the description and promotion. Still, the color popped with an impressive yellow. However, it doesn’t have the bold flavor that pops.
The saffron aspect is easy to detect. Additionally, the wildflower honey makes a nice touch providing a good background flavor. Nonetheless, this May Flowers Series option makes a nice “safe” option for those not ready for the more robust and unique flavors at Salt & Straw. Is this a good sweet treat? Yes! Should you race to get it over other Salt & Straw options? Probably not.
