While many fans have come to expect a floral-themed May at Disney Springs, the ice cream innovators at Salt & Straw have proven they love to keep us guessing. Last year, the shop famously broke its long-standing botanical tradition by introducing the “Cookbook Series,” a collection of complex, chef-driven flavors like the spicy Chocolate Chili Crisp Peanut Butter Cups and the decadent Strawberry Tres Leches. As we enter May 2026, the big question is: will we see a return to the garden, a revival of the Cookbook hits, or something entirely new for the Salt & Straw May 2026 flavors?
Salt & Straw May 2026: Flowers Series is Back!

For May 2026, the “Flowers” are back! This time it is called the May Flowers Series. This series takes advantage of everything fresh being available this time of year. These flavors are supposed to be bright, floral, and juicy.
The Salt & Straw May 2026 Flavors include:
- Jasmine Milk Tea With Almond Stracciatella – Made by infusing fine jasmine tea in cream and sugar and lacing the ice cream with slivers of almonds coated in chocolate.
- Strawberry Tres Leches – Strawberry ice cream and strawberry jam create a deep flavor that stands up to the richness of cream and sugar. Vanilla and cinnamon come into play through a spiced tres leches cake, soaked in three kinds of milk for a melt-in-your-mouth cake swirl.
- Rhubarb Crumble With Toasted Anise – Rhubarb jam streaked through vanilla ice cream and topped with toasted anise crumbles. Guests get an ice cream with a hit of acidity, caramelized sweetness, and a hint of licorice.
- Saffron Milk With Wildflower Honey – This is made as a sherbet, adding to the density. Tyler Malek, the guru of ice cream making at Salt & Straw, states that the flavor will hit you based on the careful ice cream preparation. Guests should expect a unique combination.
- Coffee Chamomile Sherbet (vegan) – A fruity, floral sherbet made with cold brew coffee and a chamomile tea, churned with coconut cream and oat milk.

Interestingly, we see two returning flavors from May last year. Also, the only brand-new flavor for May 2026 is the Saffron Milk With Wildflower Honey. Additionally, we think these “Flower-Power” flavors will be around through May 28.
