Beginning April 20, the brand will debut Glazed Salmon, marking its first-ever seafood offering and a significant step in deepening its Mediterranean-inspired menu. CAVA Glazed Salmon: A Mediterranean-Inspired Seafood Debut

CAVA’s Glazed Salmon features a roasted salmon fillet marinated in a house-made pomegranate glaze, delivering a balance of tangy sweetness and rich, savory depth. The fish is roasted until caramelized and flaky, creating a texture that pairs well with the brand’s signature bowls and ingredients.

A standout component of the dish is the use of pomegranate molasses, a key ingredient in Levantine cooking. This glaze is sourced from Just Date, a female-founded company that produces the ingredient using only organic pomegranate juice and organic dates. The result is a clean, vibrant flavor that aligns with CAVA’s focus on high-quality, nourishing ingredients.

According to co-founder and Chief Concept Officer Ted Xenohristos, the addition is about more than variety. It’s about authenticity. At the Mediterranean table, seafood is part of everyday life, and this launch reflects that philosophy. By introducing salmon, CAVA is expanding how guests experience the cuisine while staying true to its roots.

Two New Chef-Curated Bowls

To highlight the new protein, CAVA is introducing two seasonal Chef Curations that showcase bold, balanced flavors. The Salmon + Strawberry Sesame Bowl combines glazed salmon with tzatziki, brown rice, and spinach, enhanced by a new strawberry sesame dressing. Roasted red pepper hummus, Persian cucumbers, feta, tomato and onion, and sumac slaw round out the dish, offering a mix of sweet, savory, and tangy elements.

Meanwhile, the Salmon + Yogurt Dill Bowl features glazed salmon over arugula and saffron basmati rice. This option leans into classic Mediterranean flavors with traditional hummus, Crazy Feta, fire-roasted corn, and fresh vegetables, all tied together with a creamy yogurt dill dressing. Both bowls are designed to highlight the versatility of the new protein while giving guests a ready-made option or inspiration for building their own customized meals.

Build-Your-Own Flexibility

As with the rest of the menu, Glazed Salmon can be added to any build-your-own bowl or pita. Guests can pair it with CAVA’s wide range of grains, greens, dips, and toppings, creating a meal that fits their personal taste and dietary preferences.
