We started a new month, so that means a new cookie at Gideon’s Bakehouse. Each year Gideon’s Bakehouse has been in operation at Disney Springs, one of the February cookies has been the Eternal Flame Cookie. Some years, there have been additional limited-time monthly cookies.
However, we have some bad news about this cookie. For February 2026, it is only sold on the weekends. Still, for full disclosure, we acquired two of these cookies on a weekday. So, you might be lucky as well if visiting during the week. During our visit, we waited about 20-25 minutes on a “Florida cold” day. Many guests kept asking if a virtual queue was in use. However, the virtual queue is only in use when a sign indicating it is posted. Also, that happens rarely these days!
However, this staple of Gideon’s Bakehouse continues! If theme park snacks had dessert royalty, the Eternal Flame Cookie from Gideon’s Bakehouse would wear the crown. This spicy, rich, unforgettable treat draws crowds almost as long as the lines for the headline rides at Disney Springs. Thus, we braved the legitimately cold weather to see how this year’s version of the cookie holds up.

From the moment you unwrap this velvety five-flavor chocolate cookie, you know you’re not in for your average sweet bite. The dough is intensely chocolatey, rich, and dense, fitting classic Gideon’s Bakehouse style. Still, the Eternal Flame Cookie hides an adventurous twist: house-made ancho, cayenne, and cinnamon spice mix blended throughout. Additionally, if you decide to freeze this cookie and eat it later when thawed, expect a more powerful ancho and cayenne punch.
