Even though we are not officially in November yet, Salt & Straw Disney Springs has announced the November 2025 ice cream flavors. In fairness, Salt & Straw almost always changes its monthly ice cream series on the Friday closest to the end of the month. In this case, which would be October 31. However, according to the latest announcement from Salt & Straw, the 2025 Thanksgiving Series becomes available on November 1.

Based on the last three years that Salt & Straw Disney Springs has existed, most ice cream fans expected a version of the Thanksgiving Series to run through Thanksgiving Day (U.S.A.) to be replaced with a holiday flavor on the day after. What are the Salt & Straw November flavors for 2025?

Tyler Malek, head ice cream maker at Salt & Straw, described this year’s Salt & Straw November flavors, the Thanksgiving Series, as a five-course meal transformed into sweet ice cream. The five Thanksgiving Series flavors are:

  • Parker House Rolls with Salted Buttercream – Salted butter ice cream with toasted Kings Hawaiian rolls coated with buttercream flavored with Bitterman Sea Salt chopped and folded in
  • (New This Year) Maple Koginut Squash with Pomegranate – The squash is roasted down with some pomegranate jelly for a merging of savory and sweet
  • (New This Year) Cranberry Orange Sorbet – (vegan) This takes some orange and mixes it with cranberries
  • Turkey Stuffing and Cranberry Sauce – Ice cream with crumbles of turkey stuffing made with cinnamon and brown sugar baked brioche bread pudding and Diestel Family Ranch turkey sausage cooked down with sugar, flour, black pepper, sage, rosemary, and thyme and swirls of cranberry jam
  • Pumpkin Pie Tiramisu – This sounds like a slightly modified version of the Pumpkin Spiced Tiramisu from last year.

  • Sweet Potato Casserole Vegan – Coconut and oat milk sweet potato ice cream made with mashed sweet potatoes drizzled with maple syrup and a splash of Maker’s Mark bourbon with candied pecans, brown sugar oatmeal streusel, and more vanilla-bourbon sweet potato folded in
  • Turkey Stuffing and Cranberry Sauce – Ice cream with crumbles of turkey stuffing made with cinnamon and brown sugar baked brioche bread pudding and Diestel Family Ranch turkey sausage cooked down with sugar, flour, black pepper, sage, rosemary, and thyme and swirls of cranberry jam
  • Mom’s Mango Pie – Mango ice cream with swirls of mango curd made of a mango mawa (cooked down milk dulce de leche made with Alphonso mangos), cream cheese, and whipped cream and crumbles of salty graham cracker crust
  • Pumpkin Spiced Tiramisu – Pumpkin coffee ice cream made with pumpkin purée, coffee, maple syrup, cinnamon, allspice, nutmeg, clove, and ginger with swirls of tiramisu cake made with chiffon cake, coffee-infused mascarpone, and evaporated milk and flecks of Cloudforest chocolate stracciatella

  • Parker House Rolls with Salted Buttercream – Sweet salted butter ice cream with folds of toasted King’s Hawaiian rolls topped with flaky sea salt
  • Cheesy Potato Casserole – Salted vanilla ice cream with savory potato cheesecake and crispy cornflake crumble
  • Turkey Stuffing & Cranberry Sauce – Ice cream filled with turkey stuffing made with baked brioche bread pudding and crumbled turkey sausage cooked with black pepper, rosemary, sage, and thyme, laced with cinnamon and brown sugar, and streaked with cranberry sauce (Contains meat)
  • Mom’s Mango Pie – Rich mango ice cream made of a blended mango mawa (a cooked-down milk dulce de leche made with Alphonso mangos), cream cheese, and whipped cream to make a silky sweet curd and salty graham cracker crust crumbles
  • Pumpkin & Gingersnap Pie – Coconut cream and pumpkin purée with a pinch of sea salt and allspice combined with Vermont maple syrup and molasses-spiked gingerbread pie crust (Vegan)

  • Caramelized Turkey & Cranberry Sauce – Crispy Diestel Farms turkey bacon in a savory, buttery brittle with thyme and fresh ground cubeb pepper swirled with housemaid cranberry sauce
  • Roasted Peach & Sage Cornbread Stuffing – Molasses cornbread cookies steeped in sweet cream with fresh sage swirled with dollops of honey balsamic vinegar peach jam
  • Pumpkin & Gingersnap Pie – Pumpkin pie and coconut cream ice cream crumbled with sugared crust and molasses gingersnaps (Vegan)
  • Mom’s Mango Pie – Caramelized ice cream swirled with mango curd made from mango pureé, cream cheese, and whipped cream and crumbles of salty graham cracker crust
