Salt & Straw Disney Springs is renowned for its inventive, rotating ice cream flavors, and June 2025 is no exception. June appears to be a month of pie-themed ice cream at Salt & Straw with the Summer Pie Series.

The Salt & Straw Disney Springs location, opened in April 2022, brings the Portland-based artisanal ice cream experience to Walt Disney World. This ice cream shop can be found on the West Side of Disney Springs. What makes Salt & Straw stand out is its gourmet, small‑batch flavors, ranging from classics like Sea Salt with Caramel Ribbons, Double Fold Vanilla, and Chocolate Gooey Brownie, to adventurous monthly specials like Arbequina Olive Oil or Birthday Cake & Blackberries.

Friendly staff offer generous samples and knowledgeable recommendations, enhancing the fun, exploratory vibe. In short, Salt &  Straw at Disney Springs delivers playful, premium ice cream, ideal for anyone craving a flavor adventure in a magical setting.

The month of June ends the sale of the Cookbook Series limited-time flavors. However, the previous June flavors did not provide much of a clue about what to expect for June 2025 at Salt & Straw Disney Springs.

Upcycle Series

In June 2024, guests can experience the Brewers Series, which features five new flavors created in collaboration with American microbreweries. June 2023 brought us a version of the Upcycle Series that was recently seen in April 2025. However, June 2022 saw Salt & Straw offering the Picnic Series, which included favorite flavors at picnics, like Cinnamon & Honey Fried Chicken and Deviled Egg Custard w/ Smoked Black Tea.

Rhubarb Crumble w/ Toasted Anise

Tyler Malek, head ice cream maker at Salt & Straw, revealed that June will be a month of ice cream based on summer pies. Of course, guests can start enjoying these June flavors now, as Salt & Straw typically introduces new monthly flavors on Fridays. He also revealed that some of the recipes are brand-new.

The Summer Pie Series includes the following flavors:

  • Wild-Foraged Berry Slab Pie – Salted vanilla ice cream with puff pastry pie crust and wild berries (wild mountain blackberries, blueberries, and lingonberries)
  • Rhubarb Crumble with Toasted Anise – Rhubarb jam is rippled through vanilla ice cream, topped with a pie-topping crumble, and capped with aromatic toasted anise. Salt & Straw has been making this flavor for over a decade.
  • Wildflower Honey & Lemon Chess Pie – A honey and lemon ice cream base with a traditional chess pie crust and lemon curd.
  • Coconut Cherry Pie with Almond Crust (Vegan and Gluten-Free) – This takes the cherry pie and almond combination that Salt & Straw has been making for a few years and substitutes coconut cream for milk. It is spiked with a little bit of vanilla and amaretto.
  • Gruyère & Tomato Custard Tart – A classic custard paired with a savory cheesecake tart featuring gruyère and cream cheese, cooked down with a rich tomato jam.
