This spot has become the festival circuit’s resident laboratory, and for the 2026 Epcot International Festival of the Arts, they’ve brought back a fan favorite with a much-needed glow-up: the Liquid Nitrogen Minnie Cake Pop.
Let’s be honest: Swirled Showcase has a bit of a “Jekyll and Hyde” reputation. We still dream about the Liquid Nitrogen Frozen Pumpkin Cheesecake Mousse from Food & Wine, which was an absolute triumph. But then came the holidays, and the Chocolate-Peppermint Mousse arrived with all the festive cheer of a damp sock. Thankfully, the 2026 Minnie Cake Pop seems to have learned from the past.

Liquid nitrogen creates ultra-smooth ice cream and cake pops by flash-freezing the base instantly at incredibly low temperatures (around -320°F or -196°C), which prevents large ice crystals from forming, resulting in a creamier texture and locking in flavor. The rapid freezing process is similar to churning but much faster, simultaneously freezing and aerating the mix as it turns liquid into a solid almost immediately. At Swirled Showcase, guests can view this process happening as their pretty Minnie cake pop moves into the nitro-freezing area.

This year, the kitchen swapped out last year’s somewhat polarizing berry sponge for a cotton candy sponge cake. Encased in a white chocolate ganache and flash-frozen in liquid nitrogen, the result is a shell that snaps with a satisfying “crack” before giving way to a soft, sugary center. To fit the “Arts” theme, it’s adorned with colorful chocolate splats that make Minnie look like she just finished a shift in a Jackson Pollock studio.

While the cotton candy flavor is definitely for the “sugar-is-a-food-group” crowd, the texture is a massive upgrade. It’s whimsical, it’s cold, and it’s significantly better than eating peppermint-flavored sadness. Our group went into this Liquid Nitrogen Minnie Cake Pop review assuming this would be a festival favorite.

The Liquid Nitrogen Minnie Cake Pop fails to be overly dense. This could be shareable, if you do that sort of thing. However, you are probably getting more than one at this price. The various flavors balance each other out nicely. Guests will not find this sugary nitro treat to be overpowering. It presents a lighter set of flavors compared to previous nitro treats from Swirled Showcase. Overall, the Liquid Nitrogen Minnie Cake Pop makes a decent value for sweet treat lovers.
