Gideon’s Bakehouse brings a splash of summer with the Sea Turtle Cookie, available for a limited time this July at Disney Springs.

On July 16, Gideon’s Bakehouse started selling a new limited-time cookie. In an interesting change of pace for the Disney Springs bakery, July served as a month with two limited-edition cookies. From July 1-15, the Rocky Road Cookie served as the starring cookie. However, that changed on July 16. As a result, we visited Disney Springs to try this July cookie.
Sea Turtle Cookie for the Rest of July 2025
The Sea Turtle Cookie returns. This cookie pays tribute to the popular candy from 1918, the Sea Turtle Cookie. This popular flavor consists of premium Chocolate, Homemade Caramel, and whole giant Candied Pecans sprinkled with the signature Sea Salt. Additionally, a portion of the sales from this flavor will support the Florida Sea Turtle Conservancy, the world’s oldest sea turtle research and conservation organization. Just to let you know, we have enjoyed this cookie when it was previously sold at Gideon’s Bakehouse. The cookies at Gideon’s Bakehouse are known for being rich, not sweet. However, the Sea Turtle Cookie enters the realm of sweet. The caramel within this cookie brings a sweetness factor, in a good way.
The soft composition of the cookie works nicely, paying tribute to Turtle candy. Turtle candy, a classic confection combining pecans, caramel, and chocolate, was first created in 1918 by Johnson’s Candy Company in Chicago. Its name also comes from its distinctive shape, the cluster of caramel-covered pecans coated in chocolate resembles a turtle, with the nuts sticking out like legs and a head.
This sweet innovation quickly gained popularity due to its rich flavor and delightful texture contrast: the crunch of pecans, the chew of buttery caramel, and the smoothness of chocolate. The original “Turtles” became so iconic that the name was trademarked, and the candy became a staple gift and treat, particularly around holidays. Over the decades, variations emerged using different types of nuts or chocolate, but the classic trio remains a nostalgic favorite. More than a century later, turtle candy continues to charm candy lovers and holds a special place in American confectionery history as a timeless, indulgent treat.

In our cookie, the candied pecans played a secondary role. Still, we love how those blend with the rest of the cookie’s components.

This cookie does cost $7. This is slightly higher than the typical price of the limited-edition cookies at Gideon’s Bakehouse, which is $6.50. For the record, the everyday nearly half-pound cookies cost $6. We assume this cookie costs more since a portion of the sales of the Sea Turtle Cookie supports the Florida Sea Turtle Conservancy.

For guests seeking a unique cookie, this fits the bill. The flavors work very well together, presenting a positive experience. Guests will need to like caramel, though. However, we understand that paying seven dollars for this cookie might sound high to some guests. Despite that, most guests will be glad they bought this cookie.

People buying this cookie should beware of the Florida sun. Though not as bad as with the Key Lime Ice Box Pie, this will melt. We also want to warn guests about the potential sticky mess that this cookie can cause. It’s worth it, but you’ve been warned.
