Get the scoop on the Busch Gardens Fraisier at Bier Fest Brews & BBQ. We review this refreshing layered dessert – perfect for a sampler lanyard or sweet treat?

Ah, Bier Fest. The very name conjures images of frothy steins, sizzling BBQ, and the delightful dilemma of choosing between the mini pretzel bites with cheese and a flight of obscure craft beers. Every year, as the summer swelter reluctantly gives way to a slightly less sweltering Florida autumn. However, we are not there yet. Until Labor Day, Busch Gardens Tampa Bay offers, on select days, Bier Fest Brews and BBQ Festival.
During this, the festival area transforms into a culinary wonderland. It’s a glorious celebration of all things beer and barbecue, featuring dozens of craft brews, ciders, and cocktails from around the globe, paired with an equally impressive array of savory and sweet bites. Think German sausages, smoked brisket, international street food, and, if you’re like us, a relentless pursuit of the next great dessert.
Busch Gardens Fraisier

This past festival season, our taste buds were on high alert for something new, something… different. My mission, should we choose to accept it (and we always choose to accept it when dessert is involved), was to locate and critically evaluate a particular sweet treat that had whispered its name through the park’s grapevines: the Asian Strawberry Fraisier from the Smokin’ Samurai Cabin. Could this be the ultimate Busch Gardens Fraisier experience?
The Epic Quest for a Layered Legend

Navigating Bier Fest is an adventure in itself. One moment you’re admiring a magnificent animal, the next you’re pondering the existential choice between the Brisket Mac Cone and a bratwurst. But my internal compass, finely tuned to the scent of sugar, led me unerringly towards the Smokin’ Samurai Cabin. This particular outpost, nestled amidst the general festivity, promised an intriguing fusion of flavors, and there it was, gleaming under the cabin’s warm lights: the Asian Strawberry Fraisier.
Priced at a respectable (or perhaps, slightly audacious, depending on your dessert budget) $9.89 before any discounts, this little architectural marvel presented itself. Described as a sponge cake layered with vanilla cream and fresh strawberries, all elegantly crowned with a subtle citrus glaze, it looked like a dainty jewel among the heartier, more rustic offerings. Our first thought, however, was less about elegance and more about economics. Compared to some of the other substantial desserts on offer, like the decadent Chocolate Pecan Tart, the Fraisier’s portion size struck us as, shall we say, petite. A single-serving wonder, perhaps? Or a dessert designed for those who appreciate quality over sheer volume? Only a bite of this Busch Gardens Fraisier would tell.
What is a Fraisier?
Before we dive into the delicious details of this specific Busch Gardens Fraisier, let’s take a moment for a quick culinary enlightenment. For those unfamiliar with this sophisticated dessert, a Fraisier is a classic French cake renowned for its elegant presentation and delightful combination of flavors and textures. The word “fraisier” itself is derived from “fraise,” meaning strawberry in French, giving a strong hint to its star ingredient.
Typically, a fraisier consists of layers of light genoise sponge cake (a type of delicate sponge), generous amounts of a rich, vanilla-flavored créme mousseline (a pastry cream enriched with butter), and, most importantly, an abundance of fresh, sliced strawberries arranged around the perimeter and within the layers. Often, the top is finished with a thin layer of marzipan or, as in our Busch Gardens version, a shimmering glaze.
It’s less about a colossal sugar rush and more about a harmonious balance of fruit, cream, and cake, designed to be both refreshing and satisfying without being overly heavy. So, our “Asian Strawberry Fraisier” was taking a classic and giving it a subtle twist, presumably with that citrus glaze adding the “Asian” flair.
The Moment of Truth: A Layered Symphony

With high hopes (and a slightly grumbling wallet), we dug into the Busch Gardens Fraisier. The first impression upon cutting into it was promising: the layers held together beautifully, a testament to its construction. Also, the layered texture was exactly what we had enjoyed. The delicate sponge cake provided a soft base, perfectly complemented by the smooth, velvety vanilla cream. The glaze on top offered a bright counterpoint, preventing the dessert from becoming overly sweet. This marked a definite win for a theme park treat. However, we did not find the glaze to be anything more than an average theme park festival level. Still, that worked fine with this treat.
About the strawberries… Oh, the strawberries! They weren’t just scattered willy-nilly; they were thoughtfully placed, primarily nuzzled near the bottom of the fraisier, offering bursts of fresh, juicy sweetness with almost every spoonful once you reach that point.
Now, let’s talk about the “fine” factor. Did this Busch Gardens Fraisier blow our socks off? Did it send us into a transcendental state of dessert euphoria? Honestly, no. It tasted… fine. It was pleasant, well-executed, and certainly enjoyable. It’s the kind of dessert that makes you nod approvingly and think, “Yes, this is good.” It doesn’t make you want to write sonnets or challenge the chef to a duel for its recipe. Still, sometimes, “fine” is perfectly, wonderfully sufficient, especially when you’re navigating the sensory overload of a theme park festival.
The Sampler Lanyard: Your Dessert Destiny Decoder Ring

This brings us to the unsung hero of all Busch Gardens festivals: the sampler lanyard. For the uninitiated, these lanyards are essentially your golden ticket to culinary freedom. You purchase a lanyard with a set number of “punches” (e.g., 5, 8, or 10 samples), and each punch can be redeemed for almost any food or beverage item at the festival cabins. It’s a brilliant system for a few key reasons: you save money compared to buying items à la carte, you get to try a wider variety without committing to full-sized portions, and it often makes those slightly pricier individual items feel like a much better deal.
In the case of our Asian Strawberry Fraisier, the lanyard transforms its value proposition. If you’re using a sampler lanyard to procure this delicate delight, you’ll likely be perfectly content with your choice of Busch Gardens Fraisier. The perceived cost per item on a lanyard often makes you more forgiving of portion sizes and slightly less mind-blowing flavors. It becomes a perfectly respectable, refreshing, and satisfying use of one of your precious punches. However, if you’re paying the full $9.89 out-of-pocket, the small size and merely “fine” taste might leave you wishing you’d opted for something more substantial or overtly decadent.
The Verdict: A Refreshing Respite with the Busch Gardens Fraisier

Ultimately, the Busch Gardens Fraisier from the Smokin’ Samurai Cabin at Bier Fest isn’t going to win any “Most Jaw-Dropping Dessert” awards. Additionally, it will not be etched into the annals of Busch Gardens culinary legend. Still, it is a delightful, lighter, and genuinely refreshing dessert option amidst a sea of heavier, richer festival fare. It offers a sophisticated flavor profile with its bright glaze and fresh strawberries, a welcome palate cleanser after a plate of BBQ or a hearty beer.
While this Busch Gardens Fraisier might not amaze anyone or redefine your dessert expectations, it certainly holds its own. For those seeking a delicate, layered treat that won’t weigh them down, especially if you’re leveraging the economic magic of a sampler lanyard, this Fraisier is a solid choice. It’s like the quiet, unassuming friend at the party who doesn’t demand attention but is always a pleasure to spend time with. So if you make it before Bier Fest ends, give this little layered legend a try. We expect some version of it at future Busch Gardens Tampa Bay festivals. Just make sure you’ve got that lanyard handy!
