We just got back from Busch Gardens Tampa Bay’s Bier Fest Brews & BBQ, and after working our way through five sampler lanyard items plus four additional menu items, one dish is still living rent-free in our heads: the Loaded Brisket Burnt End Stuffed Potato Ball from the Tipsy Bird Cabin. Out of everything we tried at this year’s event, it’s the one bite we’d send you straight to the front of the line for.
Busch Gardens Tampa Bay invited us out to experience Bier Fest firsthand, complete with a sampler lanyard for five festival items, and we rounded out the visit by ordering a handful of additional dishes a la carte via pass members’ rewards. What Is the Loaded Brisket Burnt End Stuffed Potato Ball?
Found at the Tipsy Bird Cabin (Cabin 5), this item takes a crispy fried potato ball, stuffs it with chopped brisket burnt ends, then piles on beer cheese, honey ancho adobo BBQ sauce, chipotle lime crema, crispy onions, and fresh scallions. It’s priced at $9.99 before any discounts or sampler lanyard redemption, and it’s one of three entrees available at the Tipsy Bird Cabin this year, alongside the Grilled Sweet Bourbon Pineapple & Pork Skewers and the Gochujang & Herb Grilled Lamb Chops.
Busch Gardens Bier Fest Review
Let us be clear. We have enjoyed some Bier Fest items in the past. However, we have also found some Busch Gardens Bier Fest menu items to be below average or misleading. Still, we expected improvement this year. The menu item with the long name stole the show. The Loaded Brisket Burnt End Stuffed Potato Ball earns the title of best bite at Bier Fest for a few reasons, and none of them are a fluke.
Reasons For our Praise
- Unique execution. We haven’t seen brisket burnt ends stuffed inside a fried potato ball anywhere else on Busch Gardens Tampa Bay’s festival circuit. In fairness, we do not recall seeing anything like this at any of the Florida theme park festivals. It doesn’t feel like a reheated version of something you’ve had five times before at other festivals.
- Well prepared. The fry job on the potato ball was clean and crisp, with no greasiness weighing down the bite, and the interior held together instead of falling apart the second the fork touched it.
- Plenty of brisket. This isn’t a token scoop of meat buried under sauce. The burnt ends are generous and are clearly the star of the dish, not an afterthought.
- Balanced heat. The chipotle lime crema and honey ancho adobo BBQ sauce bring a slight amount of spicy heat that builds gradually instead of overwhelming the dish, so it’s approachable even for guests who don’t usually go for spicy festival food.
- Open kitchen concept. The Tipsy Bird Cabin runs an open kitchen setup, so you can sometimes watch the food being prepared as you wait. It’s always a good sign at a festival cabin, and it shows here in the quality of the final product.
- Portion Size. This is easily shareable, which can not be said about a few other Bier Fest Busch Gardens offerings…looking at your sliders and bao.
Put it all together and you get a genuinely great theme park festival item, the kind of dish that’s worth building part of your Bier Fest visit around. Now, the flavors are not groundbreaking. However, sometimes familiar flavors done well works!
