However, there will also be the Florida sun and a good chance of a rain shower at some point in your day. Given that, finding an air-conditioned indoor dining space makes sense. Also. a quick-service restaurant with decent food makes everything better. Today Cafe at Universal Studios Florida offers these things. On a sunny July day in Florida, we visited Today Cafe to try a new-ish menu item.
Today Cafe: The Basics

Located right near the front gates of Universal Studios Florida, the Today Cafe design immerses guests directly into the set of NBC’s long-running morning show. From the signature vibrant orange sunrise logo greeting you at the entrance to the sleek, modern studio-inspired interior, the quick-service venue offers a refreshing, highly polished alternative to standard theme park fare.

The atmosphere feels bright and energetic, complete with stage lighting, acoustic paneling, and massive television screens broadcasting segments from the actual Today show. It creates a seamless transition for rope-drop crowds looking to kick off their park day with a high-quality breakfast or an afternoon pick-me-up.
Menu Options
While the aesthetic captures the buzz of a live television broadcast, the menu steals the spotlight. Rather than heavy, greasy options, the culinary focus shifts to fresh, elevated deli staples and artisanal treats.

A unique dining option at Today Café is the focaccia flatbread. They create a fluffy flatbread pizza using that style of bread. For guests ordering one of the three current flatbreads, it offers an elevated entrée. They come in three options:
- Tomato Mozzarella Flatbread – house-made marinara sauce, fresh mozzarella, vine ripened and roasted tomatoes, micro basil, focaccia
- Mediterranean Vegetable Flatbread – roasted eggplant tapenade, Kalamata olives, peppers, onion, hummus spread, focaccia

When you are looking for an upscale, fresh lunch alternative to standard theme park burgers, the Today Cafe at Universal Studios Florida is a top-tier choice. On our recent visit, we stepped out of the Florida heat to review the Tomato Mozzarella Flatbread. Priced at $16.99, this vegetarian-friendly dish features house-made marinara sauce, fresh mozzarella, vine-ripened and roasted tomatoes, micro basil, and a focaccia base. Ultimately, this dish is exactly what it says it is: a boutique, elevated flatbread.
The Flavor and Texture Profile

The moment the dish is served, it hits you with a wonderful, nice aroma of fresh basil and baked bread. Since the base is a true focaccia, the flatbread is delightfully thick and fluffy. The crust hits that perfect sweet spot: it is borderline cracker-level crispy on the edges in the best way possible, while remaining pillowy in the center.
Like the slices at Pizza Ponte over at Disney Springs, these flatbreads are pre-made and kept in the case. Once you order, a team member warms it up for about two minutes. Because of this quick-heating process, it will cool down quickly like most menu items of this type, so do not take too long to take photos or find a table before digging in.
How to Eat It (Skip the Silverware!)

Since the focaccia base is a little too thick, you will find it incredibly difficult to cut easily with a plastic fork and knife. However, don’t let the upscale presentation fool you. This flatbread is meant to be eaten with your hands. The fluffy focaccia pulls apart easily by hand, making it much more manageable. When you approach it as pull-apart focaccia rather than a rigid pizza, the overall flavor profile works beautifully.
A Note on Flavor: If you are expecting a traditional pizza drenched in a robust, heavy pizza sauce, you will be disappointed. The house-made marinara and roasted tomatoes offer a lighter, more delicate, and upscale flavor profile.
Size, Value, and Niche Appeal

In terms of portion size, it is a very good, filling portion. It is noticeably larger than a single slice at places like Pizza Ponte, though it does cost significantly more at $16.99.
Keep in mind that this is clearly a more niche entrée. While we were dining, we noticed two younger kids attempting to eat the same flatbread; they were having a significant struggle with it and looked completely unexcited. If you have picky eaters, this upscale profile might not be for them, but it is a fantastic vegetarian option for adults wanting something lighter.
Overall, the Tomato Mozzarella Flatbread fits Today Cafe very well. Sure, the price point appears a bit high. However, those looking for something beyond standard theme park food will appreciate this.
