Gideon’s Bakehouse July 2026 brings new limited-time cookies, cake, cold brew, and exclusive merchandise to Disney Springs this month. For July, we get three different limited-time cookies and two different cake slices.
A new month means a brand-new lineup of delicious treats and exclusive collectibles at Gideon’s Bakehouse in Disney Springs. The fan-favorite bakery has unveiled its Gideon’s Bakehouse July 2026 menu, featuring limited-time cookies, specialty cake slices, a new Nitro Cold Brew, and an all-new merchandise collection inspired by this month’s featured character.
As always, these offerings will only be available while supplies last throughout July, making an early visit to Disney Springs highly recommended. Here’s everything you need to know (or at least what we know at this point):
July 2026 Limited-Time Cookies

Gideon’s Bakehouse is serving three exclusive cookies throughout July. However, we will only encounter them one at a time.
Orange Pecan Chocolate Chip
Gideon’s Bakehouse describes this cookie like this: “This popular flavor is a Vanilla Bean Chocolate Chip Cookie infused with Orange magic and topped with our favorite Dark Chocolates, delightful South Florida Pecan Pralines, and a very special Candied Orange Peel.” This cookie will only be available from July 1-10 so act fast
In addition to the Orange Pecan Chocolate Chip Cookie, two more limited-time cookies will be sold in July. Those are:
- Lemon Poppyseed Crumb Cookie (July 11-20)
- Key Lime Chocolate Chip (July 21-31)

One thing Gideon’s Bakehouse does exceptionally well is embracing bright summer flavors. While every July menu is unique, several memorable seasonal cookies have appeared over the years.

The Rocky Road Cookie

The bakery leaned into citrus flavors with two refreshing summer cookies.
Orange Pecan Chocolate Chip Cookie
A vanilla bean cookie infused with orange essence and loaded with premium chocolates before being topped with South Florida pecan pralines and organic candied orange peel.
Lemon Poppy Crumb Cookie
A lemon cookie filled with poppy seeds and white chocolate before being topped with buttery lemon crumbs and a light sugar glaze.

Key Lime Chocolate Chip Cookie
Vanilla bean cookie dough infused with authentic Florida Key lime juice, covered with premium chocolate chips and special Key lime pie crumbs.
Coconut Caramel Chocolate Chip Cookie
A vanilla bean chocolate chip cookie featuring homemade salted caramel and coconut cream, finished with shaved toasted coconut.

Guests enjoyed another appearance of a now-beloved favorite.
Orange Pecan Chocolate Chip Cookie
Nearly a half-pound vanilla bean cookie infused with orange and dark chocolate before being topped with South Florida pecan pralines and organic candied orange peel. Many fans know it as “Stuart’s Cookie.”
Banana Bread Chocolate Chip Cookie
Vanilla bean cookie dough made with real bananas, dark and semisweet chocolate, candied walnuts, and finely crushed banana chips. Its popularity eventually earned it a permanent place on Gideon Bakehouse’s regular menu.
Gideon’s Bakehouse July 2026 Cake Lineup
Gideon’s Bakehouse is also offering a limited-time cake slice throughout the month. As with previous months, cake availability may vary by day, and quantities are limited. For July 2026, it will be the Orange Pecan Chocolate Cake. It will be available on Wednesdays and Saturdays. Gideon’s Bakehouse describes it as a three-layer chocolate cake smothered in dark orange chocolate buttercream that is coated with chocolate chips, candied pecans, and candied orange. Also of note, the Strawberry Crunch Cake stays around for another month. It is available on Mondays.
Also, on Wednesdays and Saturdays in July, Gideon’s Bakehouse will sell Lemon Crumb Cake slices. These feature “Lemon Cake with Lemon Cream Cheese Frosting and Lemon Crumb accents.” Gideon’s Bakehouse suggest keeping this one cool.

Gideon’s Bakehouse July 2026 Nitro Cold Brew
Stuart’s Orange Mocha Nitro Cold Brew will be around for Julky 2026. It contains “Oatmilk, Maple Syrup, Mocha, and Fresh Orange!” Additionally, there might be a special Cold Brew treat on weekends.
Gideon’s Bakehouse July 2026 Merchandise Collection
“Menu Collectors! Just like the Cookies, the menu will change every 10 days! Stuart can be found from the 1st to the 10th, then a new design from the 11th to the 20th, then a finale from the 21st to the 30th. Get them in line at Disney Springs or with your merch orders online. The menu you receive will match what we hand out on the day of your order.
