Gideon’s Bakehouse has transformed the simple act of buying a cookie into a theatrical event that draws crowds from across the globe to Disney Springs. What started as a small operation in Orlando’s East End Market has blossomed into a cult-favorite institution, largely due to its commitment to an eerie, Victorian-gothic aesthetic and nearly half-pound cookies. Stepping inside the shop feels like entering a classic library or a scene from a Tim Burton film, where flickering candlelight illuminates shelves of curiosities and heavy, handcrafted treats that take over 24 hours to prepare.

While the atmosphere is undeniably captivating, the rotating menu of limited-edition flavors keeps even the most seasoned visitors returning month after month. Each release is treated as a character in the growing Gideon’s lore, offering unique flavor profiles that deviate from the standard bakery fare. From their signature cold brews to the massive cake slices, every item is designed to be an indulgence, setting a high bar for what a specialty bakery can achieve within the bustling landscape of Walt Disney World.

Spring has a habit of inspiring great things, and Gideon’s Bakehouse has leaned all the way into the season with their May 2026 limited edition: the Blueberry Lemonade Cookie. After months of heavier, richer winter and early-spring releases, this brand-new cookie arrives like a breath of warm outdoor air. It looks bright, fruity, and just special enough to make you slow down and pay attention to every single bite.

Gideon’s Bakehouse Mixture

The blueberry-lemon mixture at the heart of this cookie deserves respect. Gideon’s Bakehouse uses naturally sweet ingredients here rather than artificial flavoring, and the difference is immediately evident. The lemon keeps things lively without veering into puckering sourness, while the blueberry brings a “jammy” richness that grounds the whole creation.

Then come the yogurt mini chips. Gideon’s Bakehouse was not joking when they say “a small fortune’s worth.” The topping is genuinely lavish, with chips blanketing the surface in the way only Gideon’s Bakehouse seems willing to commit to. Their creamy, subtly tangy bite plays beautifully against the fruitiness of the dough beneath.

Finishing Touches of the Blueberry Lemonade Cookie

Additionally, the Blueberry Lemonade Cookie offers some finishing touches. Guests get agave crunch for a caramelized snap, plus blueberry sugar that adds both color and a gentle fruity sweetness. Those final touches elevate the whole thing to a possible new favorite for some.

The texture, as always at Gideon’s Bakehouse, is what separates these from anything you’ve had before. The nearly half-pound cookie is dense and soft in the center in a way that feels almost illicit. It is somewhere between a thick cookie and a very confident bar. Also, it holds together impressively for something so generously loaded. Guests should eat it fresh if at all possible.

We found the Blueberry Lemonade Cookie does a masterful job of showing off each flavor without any aspect being too overwhelming. While, the lemon aspect stays with you more, each guest should experience each flavor in every bite. The Blueberry Lemonade Cookie does a masterful job of showcasing carefully designed baked goods.

Gideon’s Bakehouse is one of the most popular spots in all of Disney Springs. The line can stretch toward Morimoto Asia on busy days, but it moves steadily. Weekday mornings and early afternoons tend to be the most manageable. A visit on Tuesday, Wednesday, or Thursday between opening and mid-afternoon is your best bet for a shorter wait. Weekend evenings are the busiest times of all. Arrive early, grab your spot, and enjoy the atmosphere. There’s usually plenty to see and do in the surrounding area while you wait.

Every day from 2–3 p.m. and again from 7–8 p.m., Gideon’s Bakehouse serves a warm Original Chocolate Chip cookie topped with Kelly’s local artisan ice cream. If you happen to be at Disney Springs during either window, Hot Cookie Hour is one of the best-value treats on property.

The Vibe is Unlike Any Bakery You’ve Been To

Gideon’s Bakehouse began with a founding legend: owner Steve Lewis discovered the name “Gideon” in what he believed was an 1898 Victorian-era cookbook and built an entire world around it. The Disney Springs location fully inhabits that lore, with dark, gothic shelves stacked with ancient-looking books, framed portraits of ghoulish characters, flickering, dim lighting, and a moody atmosphere that guests frequently describe as equal parts Hogwarts, Haunted Mansion, and Tim Burton. It is a legitimately theatrical space, and absolutely worth stepping inside.

The Menu Goes Well Beyond Cookies

Gideon’s offers three-layer scratch-made cake slices, a line of housemade Nitro Cold Brews with flavors you won’t find at any chain coffee shop, and Cookie Bites, quartered cookies fully dipped in chocolate, each a distinct experience. Collectible merchandise and trading cards are also sold in-store and tend to go quickly on release days.

No Shipping, No Preorders at Disney Springs

Everything is made by hand, and Gideon’s Bakehouse does not ship. The Disney Springs location does not offer preorders either. If you want to preorder for pickup, that option is available at the original East End Market location in Orlando, roughly a 45-minute drive from Disney Springs, and the wait there is typically far more manageable.

The Blueberry Lemonade Cookie is Worth It, Whether Your First Visit or Not

The Blueberry Lemonade Cookie is a springtime triumph. It is bright, fruity, and generously topped in the way only Gideon’s Bakehouse does. If you’re visiting Disney Springs any time in May 2026, it deserves a spot at the top of your must-try list. Still, if it’s your first time at Gideon’s altogether, know that the experience, the line, the atmosphere, the sheer scale of the cookie in your hand, is as much a part of the magic as the first bite.
