Planning a trip to Walt Disney World this winter? You’ll want to save room for dessert because the Salt & Straw January flavors are officially arriving at Disney Springs on January 2. As one of the most popular spots for foodies on property, the shop features a rotating monthly menu, offering a unique culinary experience you won’t find anywhere else in the parks. Check out the 2026 limited-edition series before these seasonal scoops disappear at the end of the month.

The Dairy Free Decadence Series

Based on the previous three Januarys in which Salt & Straw has operated at Disney Springs, we expected a return of the Dairy Free Decadence Series. Historically, every January, Salt & Straw transforms its menu to celebrate “Veganuary” with the highly anticipated Dairy-Free Decadence series. This collection is a masterclass in plant-based innovation, designed to prove that removing dairy doesn’t mean sacrificing the rich, velvety texture that ice cream lovers crave. Instead of simply offering sorbets, Head Ice Cream Maker Tyler Malek uses diverse bases such as coconut cream, oat milk, and even upcycled barley milk to mimic the high butterfat content of traditional cream.

The series typically reimagines classic American desserts through a vegan lens. Past hits have included “Death by Chocolate Chocolate Cake,” featuring fudgy brownies and ganache, and the recurring “Bananas Foster with Candied Pecans,” which uses a rum-spiked banana caramel. By incorporating artisanal techniques, such as house-made jams and scratch-baked cake chunks, Salt & Straw ensures these scoops feel just as indulgent as their dairy counterparts. Whether you are a lifelong vegan or a curious omnivore, this series offers a sophisticated, “non-salad” approach to healthy-ish New Year’s resolutions.

As expected, Salt & Straw Disney Springs unveiled a vegan collection of five limited-time ice cream flavors for January 2026. We expect these Salt & Straw January flavors to be available through January 29, when a new series of ice cream flavors arrives. Of course, things change. For example, the Disney Springs location started selling this series a day earlier than most Salt & Straw locations nationwide.

The Salt & Straw January Flavors include:

  • Death by Chocolate Chocolate Cake – Chocolate malty barley oat milk ice cream with swirls of chocolate caramel fudge, chunks of chocolate cake, and chocolate ganache
  • Bananas Foster with Candied Pecans – Banana coconut cream ice cream with bananas foster caramel and candied pecans
  • Chocolate Pistachio Milk and Cookies: Nutty pistachio-cashew ice cream flecked with TCHO chocolate stracciatella and crumbles of housemade vegan shortbread.
  • Peanut Butter Brittle Caramel Fudge: Creamy coconut vanilla ice cream streaked with peanut butter, a coconut caramel fudge swirl, and flecked with shards of housemade peanut butter brittle.
  • Blood Orange Froyo Creamsicle: Tart and silky blood orange olive oil sorbet swirled together with creamy Cocojune coconut frozen yogurt.
