We recently stopped by to review one of the menu’s staples, the Low & Slow Brisket Sandwich ($15), accompanied by a side of fries. While “a sandwich and fries” might sound mundane for a culinary hot spot like Disney Springs, this is no ordinary theme park lunch.
The Sandwich

The Low & Slow Brisket Sandwich displays an impressive construction featuring a generous mound of prime brisket, creamy pimento cheese, rich porter BBQ sauce, zesty pickled jalapeños, and crispy onion straws. It’s served with a large pickle spear on top (easily removable for those who are pickle-averse).
We found the sandwich to be incredibly filling and could easily be a meal for two people if paired with a side. The brisket was heavily seasoned and loaded onto the bun. While we initially noted the brisket was a touch dry, the abundance of house-made BBQ sauces—always within easy reach—quickly fixes that issue.
The flavors are expertly layered, precisely what you’d expect from a Michelin-recommended kitchen. The pickled jalapeños, which tasted prepared in-house, delivered a noticeable but pleasant spicy heat that cut through the richness of the brisket. The healthy portion of crisp onion straws provided a perfect textural contrast.
The Side: Waffle Fries

Note that sandwiches at The Polite Pig do not automatically include a side, so you’ll want to budget $6 for an order of waffle fries. For fries fans, these are a must-have. They are seasoned with the restaurant’s signature BBQ rub, which elevates them beyond standard theme park French fries and makes them a quality side worthy of a top-tier barbecue joint.
